I found two possible explanations on the "tuna fish" thing, though both are just speculations: 1) Tuna wasn't a well-known variety of fish among the general public when it was first distributed in canned form, and consumers who saw cans just labeled "tuna" didn't know what they were buying. They started marketing it as "tuna *fish* " so that buyers would know they were buying a type of fish. After that the label just kinda stuck (sticked?), though I dod see a post suggesting that it's kept around to differentiate between canned tuna and tuna steaks/fillets. 2) "Tuna" is also Spanish for "prickly pear". As ridiculous as it might sound, there are probably people who need the "fish" label so they know they're not buying a can of cactus fruit.
