Chef whenever I make tortang talong, I either char the eggplant on charcoal (which is the best IMHO) or on top of the stove before you peel it and dip it in the egg. Plus I fry it like a frittata. It brings out the umami of the eggplant. And don’t forget the knorr seasoning of course!

Proof that Bacolod food is one of the best in the Philippines Toni boy escalante and Chef JP both from Bacolod and many more Bacolod cooks like the owner of Cibo are from here in Bacolod if you’re food sucks you’ll really get bullied some might say Bacolod people are mayabang or “Tikalon” but it’s what makes our town special cause we always like to compete which usually ends up resulting to Bacolod people making the best stuff our competitive nature

Hi Chef JP. My wife and I celebrated our wedding anniversary there yesterday. And i ordered the corned beef slab. But unfortunately, it was really salty. Was it supposed to be salty? I was not sure so I didn't complain. And I was just wondering why they gave us a slice of bread with choco chips with butter? The waiter said it was supposed to accompany the corned beef. Well, I didn't finish it.. i just tasted it. I wasn't sure if the bread was supposed to be buttered? The good thing is that we liked the salad with walnuts and candied pears, and also the mushroom soup. My wife also liked her order of bistek tagalog.

It doesn’t matter if he used the word everybody. common filipinos can afford especially those common filipinos who strived to be successful and reward themselves for the sucess they have. Surely he knows that because he is one of those everybody who can afford to eat in a fancy restaurant.
