Pad Kee Mao ผัดขี้เมา, aka Drunken Noodles , is a classic noodle stir-fry dish with loads of aroma from the spices and herbs used. "Drunken" refers to the state of the person who is eating it. The flavor is so robust, it will "sober you up."

💡TIPS FOR MAKING PAD KEE MAO/DRUNKEN NOODLES
1. Separate the fresh wide rice noodles before stir-frying to prevent clumping
2. Make 1 serving at a time for best results. 2 servings at a time should be the max.
3. Use a nonstick pan.
4. Adjust flavors to your liking.

🍜 INGREDIENTS
(This makes 1 serving)
Fresh Wide Rice Noodles - 1/2 lb or 227 g
Chinese Broccoli - 2 stalks
Your Choice of Protein - as much as you like
Vegetable Oil - 2.5 tbsp (see video for technique)
Garlic - 4 cloves
Red Chili - 4 chilis
Fingerroot Rhizome - 1.5 tbsp (thinly sliced)
Young Green Peppercorn - 2 clusters
Holy Basil - 1 large handful (Italian or Thai will also work)
SAUCE - Adjust flavors to your liking. Should be salty, savory, sweet.
Oyster Sauce - 1 tbsp
Thin Soy Sauce - 1.5 to 2 tsp
Golden Mountain Seasoning Sauce - 1 tsp
Fish Sauce - 1 tsp
Thai Black Soy Sauce - 1 tsp
Sugar - 1.5 tsp

i will have to keep an eye out for these ingredients next visit to the Asian grocery. some are easy or i already have, but the rhizome's and young peppercorns are totally new to me. as usual, beautiful and relaxing video. if you're ever inclined, i'd love to see the interior of your home.

Check the jarred or pickled sections for the young green peppercorn. I usually find them in a brine. I give it a good rinse and it's ready to use. They taste like vibrant black pepper. I rarely find the fingerroot rhizome fresh, it's either in the jarred sections of the Asian store, in some type of brine, or in the frozen refrigerated section. With a quick rinse, it is just as aromatic and flavorful as the fresh one. It has an herbal, earthy aroma. Thank you so much for watching!
