2 Years ago I researched the best practice for preserving foods. I looked at canning, dehydrating - both use a heat process which robs nutrition, texture, and flavor. I settled on freeze drying which keeps 98% of nutrition, texture, and flavor by using a cold process and removes more water than dehydrating. The investment for home freeze drying is significant but a far superior method of food preservation. When packaged and stored properly, freeze dried foods can be shelf stable up to 30 years.

Dehydrating tomato..i found fire roasting them beforehand really puts it over the top with flavor

Thanks for the details about 140 deg,,case hardening and MO humidity. I have been sun drying here in California using low cut cardboard boxes lined with foil for reflection placing the food on kitchen racks. I have an acrylic cover on top for the green house effect. There are vents cut in the sides that have window screen duct taped on too keep out flies. I think the food tastes better then my electric dehydrator which I still keep for backup.

I wash all fruit in water with iodine,4-5drops per quart of water,drain and sprinkle with fruit fresh[ascorbic acid,or vitamin C powder]most everything retains nice color,and the iodine has killed any bacteria, mold,or viruses that may have come home from the grocery store.Should have mentioned,wash befor slicing,fruit fresh powder after slicing

Samee. I was just looking for paprika recipes 😂 Then I got interested in where it came from... Then I got into making homemade spices... It needed a dehydrator 😭

my oven comes with a dehydrator setting. i was hoping to check it out and try something. i'm trying to figure out what to try it with. would bananas be a good choice for a first attempt?

I only have a simple dehydrated so how long for frozen veggies.

cook them first, then dry

The reason to dehydrate is so you don't have to cook them. Frozen veggies are already blanched... They will get overcooked and be ruined if you cook them again.

@@rosewood513 Raw vegetables are raw vegetables, whether from the garden, produce or frozen food section of the supermarket. Blanching prior to freezing is not cooking. If a raw food takes 20 minutes to cook, a 2-3 minute blanch doesn't do the same thing. Yes, many foods can be cooked before dehydration. Or, cooked after dehydration. All depends on personal preferences, time constraints at time of use, etc.

I know you asked a year ago and figure you probably found your answer by now. But as a general rule, yes you can expect to lose some nutritional value from most things. On balance you can concentrate the flavors and preserve seasonal produce. I personally just never seem to grow a sensible amount of tomato's lol. And I'm sick of throwing them away.
