To create makeshift gas top oven:
2 heavy bottomed pans
2 cups salt (sea salt / table salt)
2 metal rings to provide support to cake tin
2 lids of the heavy bottomed pan
For the Eggless Chocolate Cake Sponge:
150 grams yogurt, room temperature
150 grams milk, room temperature
1 teaspoon + 1/4th teaspoon baking powder
1/2 teaspoon + 1/4th teaspoon baking soda
240 grams all purpose flour
60 grams cocoa powder
240 grams caster sugar
120 grams salted butter, room temperature
1 teaspoon instant coffee powder
For the Dark Chocolate Fudge Frosting:
200 grams single cream (Amul fresh cream)
200 grams dark chocolate (I used 55%)
100 grams salted butter
100 grams sweetened condensed milk
1/4th teaspoon sea salt
Preheat the saucepan containing the salt, metal ring covered with the lid on the stove on a low flame before you begin preparing your cake.
DO NOT preheat the cake tins, they will go later once you have added the cake batter to them.
Bake for 45 - 47 minutes or until a toothpick/skewer/knife inserted in the center emerges clean.
TO BAKE IN THE OVEN: Preheat oven to 160 C / 325 F . Bake at 160 C / 325 F for about 35 - 40 minutes or until a skewer/toothpick/knife inserted in the centre of the cake emerges clean.
Note: You must refrigerate the fudge frosting for about 2 hours until it feels cold. You can even refrigerate the fudge frosting overnight but make sure to bring it to room temperature before using. It must have a spreadable consistency (almost like room temperature Nutella) when using on the cake!
