I made this today and it was an absolute fail. I think my water was too hot and it killed the yeast. The bread never rose and it didn't cook properly. I was so looking forward to this.

I just did it the second time this morning. It worked better this time. I used almost (I thought) boiling water the first time. Then it didn't look right so I added more water. Bad mistake. Today I followed the recipe to the letter and it worked! I also used a different dutch oven which I don't oil to keep from rusting. I didn't set off my smoke detector with the steam or smoke and the bread was perfectly done except the bottom which was a little scorched. My alarm didn't go off, and I didn't remove the cover but it was perfect anyway. Thanks for posting the recipe.

That is a great question. I actually have never owned an air fryer so I can't say from personal experience. Google says yes, but I don't have any personal experience on this. Good luck and enjoy!

Great question. I had a family member try that and just cover it with foil. It turned out ok, but a little more dense and not as good.

The dough is too floppy to make a rounded loaf; it needs support. An alternative to a Dutch oven is a heavy cooking pot with metal handles. It has to be large enough for the dough to expand but not so large that the dough spreads out over the bottom. If you don't have a lid, try a doubled sheet of aluminum foil; press it down around the sides to hold the steam in (wear oven mitts). Some home bakers use a cast iron skillet to hold the dough and turn a pot upside down over the dough to act as a top. A steel bowl will also work as a bottom or a top. Experiment with what you have. Just make sure the handles on any pot you use can take the heat. I have an old pot that I unscrewed the handles from, and I just keep it for bread. The heavier the pot, the better. Make sure you use the parchment paper to hold the dough. It also makes it easy to lift the dough out when done.

I'm guessing boiling water might be a little too hot. I would let it cool for a few 30-60 second) a bit before adding it. That said, I've tried so many cheats and variations of this recipe and it's almost indestructible. So you might give the boiling water a try and see what happens! Thanks so much for stopping by!

That is a Pyrex type or Corning Ware dish you have. Dutch oven is the cast iron pots with lid.

@@momlife-thrivenotsurvive9181 thanks 😊 it's good for new bread bakers to know they don't need to purchase a Dutch oven (they should! I have several!). Metal bread pans can also be used as top and bottom if they fit. I just did this to make a loaf shaped no-knead recipe. Happy Thanksgiving👱‍♀️🍀

It’s not boiling hot. If you can put your fingers in it without burning, it’s good

Great question. I use hot tap water from my sink, but it's definitely not boiling. If it's too hot it could kill the yeast or make it more sour (according to google:)

Nope. Not unless you use a proffing drawer or otherwise lightly heat the dough. I've been making this recipe for over a decade... it needs between 8-24 hours to rise at room temp. Too short a rise and it will be rock hard.

I have two that I use regularly: 1. The first is 3.5 quarts and that is the ideal size for this loaf. 2. I have doubled the recipe and made it in a 7.5 quart dutch oven and it turns out perfectly. You just don't want it too big for this loaf or it will spread out too much. I'm sure it would taste good, but it would be more flat. Hope that helps. Enjoy!

The big problem with this is it makes a round loaf which looks good but is ridiculous if you want to cut slices for sandwiches.

It would definitely make a tiny sandwich! I have doubled the recipe and made an extra large loaf which turns out great. That would work so much better for sandwiches.

Even in these days of inflation, the ingredients in this loaf are extremely reasonably priced. My husband, however, calculated the cost of the power to bake it. According to him, heating and cooking in the oven costs about twice as much as the ingredients themselves. Bummer.

This is healthier than anything from the store. Calculate better health, better energy, longer life, fewer medical bills. The smell of fresh bread baking might be a bonus but also adds to a happier home.

At what point do you add the add ins…? And how? Do you just throw garlic cloves or olives in the proofed dough before baking?

Great question. I have actually added the herbs or garlic or whatever add-ins before AND after and it turns out fine either way. I'd say if you want the bread to have a stronger garlic or herb taste then stir it in with the dough before it sits for the 18-24 hours. Otherwise, I usually stir in my add-ins right before I put it on the parchment paper and bake it. Enjoy!
