This is a lovely recipe. I had to increase the oven temp to 450 because my loaves were not browning at the temp indicated and they had to bake longer than the recommended 14 minutes. Most baguette recipes call for oven temp 450-475 and baking time of at least 30 minutes and this worked for this recipe.

It is not right to give time. How the dough rises depends on the ambient temperature and the season. However, at room temperature 22-25°C, it takes approximately 30-40 minutes.

I use a regular shaving razor. There are razors for bread, but there is no need for that. A shaving razor is sufficient.

There are many reasons for this. -- The protein value and moisture content of the flour you use are important. My humble advice is to get the flour from your neighborhood bakery. The flour sold in the market is not very convenient. It must be bread flour. All-purpose flour for pastry is not suitable for bread. -- Be sure to bake the bread in a steamy environment (unless it's a special recipe). However, since the moisture content and water absorbency of flour vary, this rate may vary between 1-1.5%. So add some more water. Features of the flour I use in this recipe: Hello... A couple of points on your home video . . . 1. These are "Demi-Baguettes", not a full baguette . . 2. it appears you are using "active dry yeast",, not "instant dry yeast" which is the preference of almost all professional bakers . Instant requires no blooming and can be added to the scaled dry ingredients directly. 3. Use "warm water" only if you live in Alaska, Denmark or places where the ambient temperature is less then 65 degrees. Your end goal should be a DDT of 73-76 degrees. If you do not understand these terms, please do your research as this is not all inclusive. 4. The mix was a "weak improved" and could use additional kneading until you reach a "cloudy with veins" state of the dough during your window pane test. This was apparent as the finished dough easily tore and lacked elasticity, a problem typical with many home bakers. 5. Shaping looked fine but the finished product would improve with the suggestions above. 6. In the couche, SEAM SIDE UP!, then flip to seam side down on the parchment paper. 7. Scoring: Try to keep your scoring within a 1" boundary, overlapping each score by about 1/3. This should create a more almond shape ear and enhance the finished product. 8, There is no need to fold the parchment paper like a "couche". leave enough separation between each demi to fully brown only but the parchment is a good idea in terms of launching the baguettes. 9. Try baking longer at 450 degrees for 24 minutes for a 200 gr baguette. 10. All of the foregoing assumes that the baker will inject steam or in the absence of a steam injected oven, will inject a water spritz into the oven at the beginning of the bake. You are right, most of the home made bread gets soft the next day. This thing is caused by many reasons. -Environmental humidity. -Moisture content of the flour. But heat the softened bread in the oven for 5 minutes. It becomes crunchy again. Because the water in softened bread evaporates.
