how long are they good for in the fridge? i never use them fast enough to get through them quickly and i have no idea when something like that goes bad

I have used both a standard quick pickle with vinegar and with lime juice as you have done. They both have their uses, but are both different enough to say one is not better than the other. Though I do prefer something like red wine vinegar overnight in most cases.

Mexican from the yucatan península here (the place where this pickled red onion is used pretty much everywhere)… I just need to point out that you should definitely skip the sugar. It is never used. Why would you? You can add a couple of peppercorns if marinating overnight tho.

Try using baby red onions. They should be bite sized. They are even better.
