Today I’m going to be sharing with you how To Make The easiest and most delicious enchiladas rojas, just how my grandma used to make them! Now let me tell you this recipe bring me lots and lots of memories of my grandma and my childhood! I shared this recipe before but it was needed to get updated! There is nothing to change when a recipe is super delicious as is!

Tip! If you don’t want enchiladas to be spicy use Chile guajillo and don’t add the Chile arbol

Ingredients:
8 New Mexico Chile pods
1 chile ancho/pasilla
5 chile arbol
1/4 onion
2 garlic cloves
1/2 tsp whole black pepper
1/2 tsp oregano
1/4 tsp whole cumin seeds
Salt I used 2 1/4 tsp
3 medium sized potatoes; cooked and peeled
Chopped onion
Queso fresco
Queso Oaxaca
Corn tortillas
1 serving of love 💕

my mom passed a few months ago and its been really hard for me and my family to eat all of our favs since we try to make them but alas they are nothing compared to her cooking. i made these last night and i almost wanted to cry because they tasted just like hers and it brought me so many memories! thank you Claudia for this recipe i will cherish it forever.

I know exactly how you feel elchacal. We grow up handling everything hot in the house. Hot iron, hot ironed clothes, hot water, hot tortillas and hot pans. I'm 55 and I miss my Mom CHINGOS❤

I just want to say I’ve tried 3 of your recipes and I’ve never had recipes work as easy as yours. It is because of you that I’m starting to cook. Exactly the whole entire continent was already named America 269 years way before the United States of America became a nation or even existed. The whole entire continent was already named America after Amerigo Vespucci in the year 1507 there was no such thing as North America, Central America South America, the Americas nor the United States of America it was just plain America. To what nowadays is Canada, Greenland and Alaska all the way down to Argentina and Chile and everything in between is America. The United States of America became a nation on the date of July 4th of 1776. That's 269 years later. 1507-1776=269 years later.

I made a pot roast the other day and for the first time I boiled the potatoes on their own, instead of in the au jus with the beef, and then I poured the beef and sauce over the potatoes when plating. It was so good to have that texture of the potatoes instead of just mush, and I thought to myself that the same would probably apply to either rolled tacos or enchiladas, and then two days later I see this, the same principle. My parents don't eat meat and I go there every weekend and cook them a dish that I wouldn't necessarily eat because I prefer meat most of the time, but I'm definitely gonna make this for them on Saturday. Thanks!

Wow those enchiladas look so good! Great job Claudia! Right now I'm sick with a cold but when I feel 100% better I will make these for my family. This is the first recipe I’ve seen that uses the very same method my grandmother and mother used to make enchiladas. We used carne molida as a filling along with chopped cabbage. I love this method. Every other recipe uses the oven and we never did. Thank you, again. Bill (Guillermo)

My husband loves enchiladas. He used to only eat the enchiladas from his mom and one of his aunts, but not anymore. Mine are perfect and every time I make them they come out better and better lol. I used to make them using my mom’s recipe, but for the past 10 years or so I started adding chocolate abuelita and they’re the bomb! I’m a new subscriber and thank you for sharing your recipes.
