This is a delicious and hearty meal we love to eat at home and it is also another one of my mom’s specialties - so she’s gonna oversee me a bit in this video to make sure I cook it just like she does. What I love about this recipe and about Tex-Mex or Mexican recipes in general is that they’re really pretty easy to make if you have a good recipe. Here is what we use:
1 ½ lb Cubed Sirloin
2 Russet Potatoes
½ an onion
⅓ green bell pepper
1 roma tomato
1 bay leaf
2 garlic cloves
2 tbsp of tomato sauce
3c chicken broth
APC OG & Comino to Taste

Just found your channel and loving it so far. Wanted to say this though. I lost my Mom about 6 months ago, and when you were like "I've got someone looking over me" and your Mom says "always" I flat out cried because that's exactly what my Mom would have said to me. It's so wonderful that you get to do this and that your Mom is there to be a part of it and that there's clearly so much love and respect for each other. I hope for health and success to you both.

Born and raised in the RGV, a lot of the food we ate growing up ( and still eat ) is good for the Soul as well. It is food that makes us proud of our heritage and culture .

Looks delicious Arnie! My wife's family is from the Valley region of South Texas, and her mom always made what she calls conchitas (I think its also called sopa de conchas). Your mom's carne con papas very much reminds me of that. My mother in law's recipe uses diced beef and potatoes as well, but we also occasionally use diced chicken. Great comfort food, especially on chilly fall and winter days!

Sirloin or steak, Not in my childhood! It was hamburger meat-there were seven of us. Aside from freshly made tortillas with butter, This was 1 of my favorite dishes. I think I will make this Today.

Mom makes this all the time. There were times when we would get tired of it, so we just add Mexican rice or refried beans to make it different. When it comes to flavor, this is "authentic' to a T. Great job Arnie. You passed the test again. Delicioso!

The relationship you have with your mama is absolutely beautiful and a blessing. I lost my mom to suicide at the age of 6. My daddy never remarried so I never truly knew what it was like to grow up with a mom. My daddy was an amazing father/mother role model, but there are just some things a daughter can’t talk to her dad about so although my tias tried to be there it was never the same. My grandma used to make this a bunch for us when I was growing up. Hers was always a little thicker, it was kinda like carne guisada with potatoes. A great addition to this (and carne guisada) is a little bit of Maggi sauce. It really brings out the beef flavor! My grandma swore it was the secret ingredient haha

Thank you so so much!!! I made this a few weeks ago and my mom said it tasted just like my great grandma’s!! I haven’t had anything like it, in about 15+ years or so. Now it’s a staple in our home and will continue the tradition!! By the way, we LOVE HEB tortillas too!!

Hi Arnie! I just saw your video for carne y papas and was inspired to try it. I made some minor adjustments based on what I had on hand. I used sliced white cabbage instead of the peppers, tomato sauce and beef broth. I heated the beef broth based on your mom’s tip and added water to it. It smells delicious! I can’t wait to try it! Thank you 🙏 for sharing Anie! I use to make something similar often. Would add carrots round slices when I add the potatoes and at the end when you let it simmer, I would add broccoli crowns to mine. Tasting along the way to make sure everything was well seasoned. You brought back memories! Looks great!!

I make this for my husband all the time. I do mine in the crockpot and it comes out perfect. I cook the meat in the crock for 3 hours, then add the diced potatoes for another 2 hours.
