Thai Chicken Curry with Potatoes (แกงกะหรี่ไก่) is such a family favorite. It is creamy and full with spices. We personally love to make chicken curry when it feels a bit chilly outside. 😋🤤
📝 INGREDIENTS (for 2 - 3 servings )
4 bone-in, skin on chicken thighs ( 500g / 1.1 lbs )
1.1 lbs (500g) potatoes ( we used baby potatoes, cut into fourths )
1.06oz (30g) Red curry paste ( note: we used red curry paste from southern Thailand which contains some turmeric as a part of the ingredients, this made our curry turn yellow color when cooking. Southern Thai cuisine often includes turmeric in curries )
200ml coconut milk
2 tsp. Cane sugar
1 Tbsp. curry powder
1 ½ Tbsp. Thin soy sauce
½ tsp. salt
300ml water

▪ เครื่องแกงกะทิใต้ (ดีปลี) 30 กรัม
▪ สะโพกไก่ (ติดหนัง, มีกระดูก) 4 ชิ้น ( 500 กรัม)
▪ มันฝรั่ง 500 กรัม
▪ กะทิ 200 มิลลิลิตร
▪ น้ำตาลอ้อย 2 ช้อนชา
▪ ผงกะหรี่ 1 ช้อนโต๊ะ
▪ ซีอิ๊วขาว (ฉลากเหลือง) 1 ½ ช้อนโต๊ะ
▪ เกลือ ½ ช้อนชา
▪ น้ำเปล่า 300 มิลลิลิตร
