Chefs prerogative.. I have my own recipe and I messed up by proofing them on a tin I couldn't get them out of without them deflating.. long story short, wasnt happy so sat and ate 10 muffins at 11pm. Atleast they taste good.

I ran out of English muffins and bread. I'm not going to the store anytime soon so decided to make these. They came out amazing! I did make two small changes based on the King Arthur Flour recipe which I looked at as well. Before the 2nd rise, I sprayed my stainless steel skillet with olive oil (just a spray, not a lot). I placed the rolled balls directly into the skillet instead of a baking pan. I flattened the balls and sprinkled them with regular cornmeal on both sides and let them rise about 20 minutes. I put my burner on low/medium and cooked them about 7 - 8 minutes or so on each side. I did not add any additional oil or butter. Once they were nicely browned on both sides, I turned the burner off and removed the muffins to a wire rack. One of them miraculously disappeared just like in this video. It never made it to the wire rack. These are soooo good. Slightly crunchy on the outside....soft and a little chewy on the inside.

This recipe is stupendous! I've made it a dozen times, sometimes a double batch. It is a favorite with friends and family. It is my go to bread for egg sandwiches. If I may be so bold permit me to offer some changes. I reduce the yeast to ¼ teaspoon and let it rise for 18 hours, like Food Wishes' no knead ciabatta bread. I oil a one gallon zip lock bag and pour the dough in. If you do not have someone to hold the bag open stretch it over a bowl or flower vase, being careful not to rip the bag. With the dough safely in the bag I deflate the dough and, with whetted hands, I fold the dough over, while in the bag, and deflate again. I repeat two or three time. I then put dough in the refrigerator for at least 12 hours. I have left it in as long as four days. I deflate and fold the dough at least once a day.When I am ready to shape the muffins I use no flour. I line a baking sheet with parchment paper, spray it with no-stick spray and sprinkle generously with corn meal. With the dough still in the bag I deflate and fold the dough two or three times. With wet hands I cut off and weigh out a 3 ounce portion of dough. With wet hands I pull the dough down on its self to form a smooth skin, just like you would do with dough for dinner rolls. I place it on the prepared baking sheet and press down. When all the muffins are shaped I sprinkle the top generously with corn meal and press down to flatten again. I cover with plastic wrap sprayed with non-stick spray. I let rise in a warm place for 1 ½ hours. When I am ready to fry the muffins I remove the plastic wrap and cut the parchment paper around each muffin. I pick up the muffin with the parchment paper on my hand the flip it into the hot ghee. That is the top of the muffin is fried first and then peel the parchment paper from what was the bottom of the muffin. Refrigerating the dough has many advantages. The cold dough is easier to handle and eliminates the need to add flour when shaping. The flour used for shaping does not have time to hydrate and, unless you are extremely careful, will result in a dense muffin. It allows more flexibility in making the muffins. With the dough in the frig you only need to find 2 hours to have the muffins ready to serve. I think the muffins are best the day the are fried. I've fried a portion of the same batch of dough over a few days. Thanks to Food Wishes for this recipe and I hope you find my suggestions useful.

I had no idea Chef John had made English muffins. I recently attempted a terrible recipe that was more the texture of a yeasty grilled dinner roll and through a series of fortunate suggested videos following Laura's new baba ganoush recipe, I discovered this! Now I know what to try next.

One of my favorite things to do with my extra sourdough starter, is frying up what I used to throw away. Has the nice tang of an English muffin with the bubbles, nooks, and crannies too❤️

My mother used to use tuna cans with the tops and bottoms removed. She'd fry the dough in the cans...boy I wish I had her recipe. Will give yours a try, as they look really good.

I made this on a whim in the wee hours of the morning and it WORKED. The air bubbles were there, the glorious crust was there, and I was a very happy person when breakfast time came along ^_^ Ooh, and it even works with bread flour, too! (though to be honest that was because I didn't have enough all-purpose and I had to sub in some bread flour) I had to add a little more water considering the dough was much dryer than expected, but if you achieve the same consistency before the first proof, you should get the same result as Chef John does. Thanks for another handy-dandy recipe!

I’m So glad you confirmed exactly what I’ve done all my life , and that is to carefully tear english muffins open rather than cut them in half with a knife. It must have been something I was shown as a child, it was Sooo long ago I really can’t remember who showed me, ( must have been Mom) but it really IS THE best thing to do as when they’re toasted, all the little tears & rips become crispy & taste wonderful when buttered.

I saw that Napa Valley English muffin show also and wished I had the recipe. It was several years ago and I still remember how delicious they seemed. Last week I was telling my Granddaughter about the proper way to open them and told her I had a bucket list of places to visit and some bakery in Napa was one of those places so I could get one of their English muffins. Wow am I a happy girl. Thank you so much!!!

Finished these today, using non-hipster cornmeal, well, no egg white either. And a two day dough ferment. Cooked on dry griddle. Turned out great. Happy neighbor got six out of the eight I made. Thanks Chef John.

+Nana Raef If you buy them from the store they are just dry - seared, not fried. Like use a non-stick skillet with plain cooking spray :) So they're still super healthy for you!

This is an easy recipe. 2nd time I made them, I added a fat tablespoon of honey, replaced 1/4 cup of water with buttermilk, and used the whole egg. Came out with a hint of soughdough taste. Might try all buttermilk next time. Yum

John, this came out btilliantly for me. Soft and chewy just like the muffins back home in the UK, I particularly like the fact you don't need to use butter or milk and it still turns out very tasty and light. Will use this method every time, Thx again.

I made this few weeks ago, and it was a-mazing. it had good crust, soft texture inside, and I had it with poached eggs. What's more, I made some for my parents, and they like it! It's not oily at all, so that's why my parents like it.

Wow! That's an English muffin recipe that will work. I had come to the conclusion an English muffin was a version of crumpet but then I came to the conclusion that cumpets were more like pancakes. Anyway, glad to have this recipe and technique!

The recipe is great, I use a similar one I found, but with a tiny pinch of sugar in the proofing of the yeast. ALSO, I only make one giant muffin with it :D It's awesome for HUGE English muffin pizzas :D

If you don't have proper corn meal like I don't, use polenta or fine semolina to coat the muffins on the baking sheet.

English Muffins recipe was wonderful! I haven't had an English Muffin since I returned to Brazil ... so over 3 years. I used the egg yolk to make a little of hollandaise sauce. little loved it! Shame I didn't think to take picture to send them over... I was too eager to eat! thanks a lot.

Made these - yum yum! Didn't have the hipster cornmeal and used just regular finer meal. Also added added a little sugar (about 1.5 tsp) Got a great crunchy crust. got 6 large muffins. Next time I am going to make 8 smaller ones.

Love you and your channel. I love your humor and way you lay out your recipes. After I move and hopefully have a decent kitchen I plan on trying several of them (my current kitchen is very small). Made these today and they turned out pretty good. They were a little dense but after toasting them up with some marionberry jam it was better. I made the same mistake of getting hipster cornmeal as it was half the price of the store brand but I didn't mind it after they were done. Going to make a breakfast sandwich with one of them tomorrow. Never buying them in store again.

And about half a minute to eat it and about twenty minutes to clean up. Ten minutes to post some pics on Facebook and reply to the comments to convince people you really made it. Don't forget you need to run for ninety minutes to burn off the carb.

+O2BSoLucky Back in the old days before Facebook we used to take our camera films to be developed, then run around to all our friends houses to show them the photos before we could eat the muffins. It's Facebook making everyone fat.

Persev444 I've never opened one with a fork, nor have I ever seen someone open one with a fork. Seems like a tremendous pain in the arse over using, say, a coarse toothed bread knife. You get the same result without the hassle.

Beginner here, and I've had a question regarding a few dough recipes like this. I've noticed that several dough recipes instruct the cook to let the dough rise, and then knock the air out immediately after. Would someone kindly explain what the purpose of letting the dough rise is? I always feel like that step is forfeited when the air gets knocked out anyway, but I know there must be some reason, otherwise it would be skipped. Thanks for the info in advance! I've been a subscriber to Chef John for years now and I really enjoy the comforting tone of the videos, the funny dry jokes, and the friendly instruction. Thanks for being a positive force in my life from afar, Chef John! I often turn to your vids when I need a soothing voice to listen to, when I have trouble falling asleep, or when I'm lonely. Social anxiety often prevents me from reaching out to friends or family, so it's difficult to find comfort for me. I really value your work and humor, and I've learned a lot to boot.

The reason to let the dough rise is to let the yeast reacts or "eat" the flour. Due to the reaction, the yeast release carbon dioxide which cause the dough rise and create sort of airy pockets in the dough. This is the difference between bread recipe using yeast and the ones without yeast. The ones without yeast would be hard and not soft as yeast bread. After the dough is rise, you need to knock off the air, because you don't need it.

Tams1978 Sorry weirdo. Not everyone has hours upon hours of time to waste in their lives to make English muffins. When someone says "Easy" its suppose to actually be quick and easy. Not take a monumental amount of time out of our busy lives. Some of us have to work for a living.

Watching this reminds me of a song often sung in an Elementary School classroom. It went like, "Have you heard the Muffin Man, the Muffin Man, the Muffin Man who comes down Drury Lane." How do you hear a muffin man? The answer is that in the Victorian era they carried a bell that they held up high & rang vigorously. They could be heard blocks before they could be seen.

English Muffins do not exist in England. Most people have never heard of them. They are an American invention. The closest ting in England would be Scones, which is like eating baked cardboard.

You are correct. The version of "English Muffins" demonstrated in this video, just like their namesake sold in American grocery stores, originated in the US in the 1880s, in Manhattan to be precise. But they were invented by an Englishman; an expat named Samuel Thomas, who originally called them toaster crumpets. They quickly became popular and their name was officially changed to "English Muffins" in 1894. The traditional muffins made in England for centuries are quite different from Thomas's product.

Easy English Muffins? I just go down to Sainsburys and buy a pack of four English Muffins... This is what annoys me about youtube recipes, when they say you can make these mass produced products yourself but they never mention the cost or the time it takes to actually do it, and it's ridiculously inefficient to make these recipes if you're on your own. Nothing against Chef John though, I love his videos.

+viperhalberd It's because if you don't like cooking or baking yourself, even frying an egg is troublesome for you. I enjoy baking so I don't mind the extra time needed to let the dough rise. It is also a moot point to elaborate on the cost and time needed to bake doughy things like English muffins because as I said, you need to let the dough rise so for sure it'd take some time until you can get it into your mouth. If buying a pack of English muffins is good for you, then go ahead. But you'd be pretty dumb I should say if you are ambitious enough to want to bake English muffins but you're complaining about the time needed to do it.
