Fork in the Loaf

Sourdough bread done super easy using wild yeasts. This is an easy, basic sourdough loaf bread that can be used for sandwiches. It is not super sour and is cooked a little differently than artisan sourdough bread.
Ingredients:
5 cups flour
2 cups water
1 cup sourdough starter
1/4 c. sugar
2 tsp. salt
(I do this step at night before I go to bed)
Place all ingredients into the mixer and mix with dough hook until well combined. Take dough out and pour a little oil in the bowl. Place the top of the dough into the bowl first and then flip it to coat both sides of the dough with the oil.
(You do not need to knead this dough. The fermentation will do all that work for you)
Cover with plastic wrap, or lid of some sort that will keep out bugs and keep the dough from drying out. Let sit and ferment for at least 6-8 hours.
For the second rise or ferment, pull dough from bowl, shape into loaves, put into greased, parchment lined bread pans. Cover with the plastic from the bowl and let sit a few more hours (usually at least 2 for me) and let sit until doubled in size.
Remove plastic and bake in a preheated oven at 375° for 30 minutes.
Note: The warmer your home, the less time it takes on that second ferment/rise. You can put it in the fridge for the second rise as well.

Love this recipe, thank you!!! I have been making two loaves every four days for the past month and it’s amazing. Love being able to fit slices of sourdough in the toaster. I have used as much as 2 cups of starter in it and still amazing.

I made your sourdough recipe last nite and baked the two loaves this morning. I did add olive oil to the dough. My compliments to you! The bread wasn’t just easy to make but it tastes fantastic, mmm so good. I’m happy you used sugar as I’m not fond of honey in bread dough. Thankyou for the recipe. I baked mine for 45 minutes. ❤❤

I have had to up cooking mine as well. It never came out doughy, but I found that I can cook it longer and it makes it even better. I'm glad you liked it!

Thank you, thank, thank you. I’ve been trying to make a decent sourdough loaf since February last year. Used a different KZfaq video to make sourdough starter. I’ve made several attempts at bread. All have been edible but disappointing, mostly too dense and too sour. I watched this video at least three times before trying on my own. One difference from the recipes I had been trying is your recipe uses less flour. I also made two changes, instead of 1/4 c sugar, I used two tablespoons maple syrup and two tablespoons olive oil as I heard fat makes the bread more tender. Anyway, my two loaves came out looking beautiful, I brushed melted margarine on the top. The result was perfect! Soft, flavorful easy to slice. My husband approved, which is a high compliment. I’m keeping this recipe to make again and again.

@@forkintheloaf6514 I have now made this recipe three times with good results each time. I took half the recipe and made a dozen rolls for Thanksgiving (used a muffin tin) just shortened the baking time 20/25 minutes, came out perfect. Enjoy trying this recipe, I think you will like it.

I need to try this recipe, thank you so much for sharing a real life way to make sourdough bread. Who has time for scales😅 i bet our ancestors didn't use scales only texture and feeling of the dough were enough. I didn't use measurements or scales to start my sourdough starter and it was my first time, but i did do a lot of research.

Thank you, thank you, thank you! I put together my dough last night and baked it this morning. I cannot believe how easy this is! I have been making different types of sourdough breads fo YEARS, and never had consistent success. I LOVE this for an everyday sandwich bread. This will be my go to process from now on for everyday bread. So simple!

Thank you! I just use AP flour. I have tried it with bread flour as well and they both work great. Very slight difference in texture.

The ones I have are Lodge 5" by 10.25" . They look like they are currently unavailable on amazon. And I don't see them at lodgecastiron.com. But Im sure any loaf pan, similar in size would work. I have had to increase my flour for my fresh milled whole wheat version.

Loved your video any chance of having the ingredients in lbs and ozs or kilograms. Your measuring cups look really big mine are a lot smaller. Here in Wales, UK we tend not to use cup measurements but use weighing scales. Would love to give your recipe a try, the comments are really encouraging. Thank you for your time

What adjustments would you make if you were trying this with whole spelt flour?

That is a good question. I know spelt has less gluten, so I would start by making your starter with just spelt. I don't know if it would take more hydration or not. I haven't worked with spelt since I was in high school. It would be fun to try! Let me know if you figure it out.

Terrific video clip; terrific instructions. So simple compared to more complex approaches and the results look GREAT. I like artisan bread and will certainly go through all the steps to make the occasional loaf BUT most of the time I just want a loaf a good bread on the table and this will more than fill the bill. How is this possible without a digital scale down to the 10th of a gram and measuring with research-laboratory precision and an atomic clock for timing? Your success proves that virtually everyone else is doing it wrong, making it much more difficult than it should be. Thank you.

@keepdancingmaria to me scales do take extra time, it's nice that you feel they don't. And no, it didn't take much time for me to make bread without scales or proper measurements. I started in the fall by winter i already had the feeling and how it should look. It was the amount of breads i was making like two loaves a week then i started doing cinnamon rolls and another week dinner rolls. It's practice and with scales it would have been tedious, for me again

@@lakliams So.... months of practice, at least 2 times per week.... so what I said. Time. "It would mean I have to start over...." Well, most people would not have to start over. Most people can go right to the scale. No, It does not take more time for ordinary people to use a scale than for ordinary people to use cups and spoons. You've spent the time so that you no longer need to use either. We aren't talking about people like you. You said, "who has the time?" The answer is, everyone has the time to use a scale, because cups and spoons take time, too. Hardly anyone has spent the time getting to where they no longer need to use cups and spoons. Like you have. You are pretending your experience represents many people. When it represents hardly anyone. "Who has the time to use cups and spoons?" is just as much an issue for you as "Who has the time to use a scale?" Because everyone has that time, who hasn't spent the time no longer needing either of them. You are the only person I've ever met who no longer needs either cups and spoons, or a scale. The rest of us need one or the other and both of them require time.

Oh no! I am so sorry! There can be a lot of factors that will keep yours from rising. What kind of flour did you use? How well fed is your starter? How long did you let it rise? How high did you let it rise in the pans before baking? How old is your flour? Did you use chlorinated tap water? What did you proof your dough in? etc. Can you give me a little more info on why yours didn't rise? I would love to help you troubleshoot!

Why does bread need sugar?

Yeast feeds on the sugar, producing the gas that makes the holes in bread, making it lighter and airy. It isn't so much a need as it is a help to the process. Without some sugar, the results of a good loaf of bread take a lot longer and are a lot chancier, taking more folding and handling.

@@carontownsend9890 This video is about sourdough SANDWICH bread. Not just any sourdough bread. Again, specifics matter. Sandwich bread is its own category. Both sugar and fat are needed to achieve the requisite softness/squishiness, with tiny uniform holes, even uniform shaping, and uniform blandness so that it does nothing but convey the meat and vegetables to your mouth without crumbling, dropping things, or becoming the tasty star of the meal. You can make sandwiches with any kind of bread. Including pancakes. But that doesn't make any kind of bread, sandwich bread. I make sandwiches out of sourdough bread baked in a loaf pan, but I know that doesn't make it sandwich bread. Sugar and fat are not needed for the good sourdough bread you make, I'm sure. People will answer the question you ask. Let me know if you want specifics about what sugar and fat do for the SANDWICH bread category of bread.
