Congratulations on your Mockmill...! I didn't know if I could ever afford a grinder, but then managed to get a Wondermill Impact grinder at $269 just days before the price went up another $30 across the net. I am SO grateful to have an electric grain mill. I'm planning to try your recipe in the morning. I have the Nutrimill Artiste mixer (which I managed to get for a song during Black Friday a few months ago), but I'll be making this "by hand," especially since it will be when my housemate is sleeping. I ground the flour this evening and put it in a mason jar in the fridge to keep it fresh-ish until morning. I made too much flour too -- though I knew that would happen as I find that the formula of getting 1 1/2 cups of flour per cup of wheat to be ground to be pretty true to form (though I hear some types of wheat or grain may give a little less). I think part of the reason is that the freshly milled flour has not had time to settle like the flours sold in stores. Anyhow, I used 2 cups of soft white wheat and 1 cup of spelt. I had some other flour left over from last time I made sourdough bread and I will probably use most of the flour to make some banana bread (which I sweeten with maple syrup or sometimes half honey and half maple syrup) plus one more banana than the recipe calls for, haha. My housemate's health has been going downhill for many years (long story of all the things) and for the last year she has had to use a walker even in the house to answer the door or whatever. I learned about how healing this whole grain bread (and muffins and cookies, etc.) can be and she has been doing a pretty good job of eating the whole grain breads I make (as well as the other things I make with the freshly milled flour) for just short of a month now. Get this: for the first time in a YEAR she is able to get around the house with just her cane and no walker. She was skeptical whether this whole grain consumption would make a difference for her, but now she is experiencing it (slowly but surely)! It's important to eat a good amount of bread or other whole grain food daily if possible. For her it's been between 1-2 slices bread (sometimes sourdough, sometimes yeasted) daily or the equivalent -- sometimes being in the form of bread pudding, banana bread (which she loves) and whatever else I can dream up. The bread is helping me too. (She is 69 years old and I am just over 70.) Sue Becker has done lectures on KZfaq you can see that explain just why whole grain freshly milled makes such a huge difference. (She is also a food scientist and discovered so much about this over 30 years ago. I started milling my own grain before I ever heard of her -- but after listening to her speak I am making a LOT more whole grain goodies!) Before I had the electric grain mill, (TheWondermill,, which I love), I was grinding grains in my high-speed blender for the past couple of years.

Yes, I actually broke something in that kitchen aid using cold butter, so I try not to use that anymore. My husband fixed it, but it took a bit of research to figure it out. It wasn't the nylon gear that everybody talks about online.

Thank you. I just started my journey of learning to bake n mill my own flour. Sue Becker says usually for 1 cup of wheat kernels you get about 1-1/2 cups of flour. If you haven’t watched Sus Beckers videos on Bread Beckers. I highly recommend. Bo my mind n got me inspired to start on this journey

Who has time for scales😅 i bet our ancestors didn't use scales only texture and feeling of the dough were enough. I didn't use measurements or scales to start my sourdough starter and it was my first time, but i did do a lot of research.

It's usually around 2/3 cup of wheat berries for one cup of flour. I totally understand about the sugar. Since I started cutting back sugar, I cannot even eat store bought or restaurant, or regular recipes for cookies anymore because they're too sweet. We can easily get used to less.

I use commercial milk and raw if I can afford it. My grains do well in both. The lady I bought them from uses goat milk because she raises goats. I like the taste and always mix fruit in it or sweeten it some type of way. I was taught that it’s not Keifer like Sutherland the actor 😊but people still say it that way I have a metal sieve. Mine are good. They still produce grow small. I had some that grew large curds before. Mine are about 8 years old. I’m going to do water grains again. Those grow like crazy!

same. I prefer the raw mostly because of the cream. Its really good in the kefir! I am not a fan of goat milk, or cheeses, but would learn to like it if I had to. We kind of let our water grains die out. I need to get some more though, we are all missing it.

Why does bread need sugar?

Yeast feeds on the sugar, producing the gas that makes the holes in bread, making it lighter and airy. It isn't so much a need as it is a help to the process. Without some sugar, the results of a good loaf of bread take a lot longer and are a lot chancier, taking more folding and handling.

@@carontownsend9890 This video is about sourdough SANDWICH bread. Not just any sourdough bread. Again, specifics matter. Sandwich bread is its own category. Both sugar and fat are needed to achieve the requisite softness/squishiness, with tiny uniform holes, even uniform shaping, and uniform blandness so that it does nothing but convey the meat and vegetables to your mouth without crumbling, dropping things, or becoming the tasty star of the meal. You can make sandwiches with any kind of bread. Including pancakes. But that doesn't make any kind of bread, sandwich bread. I make sandwiches out of sourdough bread baked in a loaf pan, but I know that doesn't make it sandwich bread. Sugar and fat are not needed for the good sourdough bread you make, I'm sure. People will answer the question you ask. Let me know if you want specifics about what sugar and fat do for the SANDWICH bread category of bread.

I too was deciding on that mock mill or the Komo. I ended up getting the Komo...not sure what you mean by the corners but I've never had a problem with it. They are both lovely mills.

Good to know! In some of the reviews I saw, they were saying something about flour getting caught in the corners? You haven't noticed anything there? That is good info! It turned out really good, I am not sure what changes I would make next time. I notice that garlic doesn't seem to make it through the canning process very well, so I will often add some garlic powder to it. I usually add salt and pepper to it as well. If I were to change anything, I would probably reduce the amount of tomato in it, but my husband likes it tomato-y...so maybe not

@keepdancingmaria to me scales do take extra time, it's nice that you feel they don't. And no, it didn't take much time for me to make bread without scales or proper measurements. I started in the fall by winter i already had the feeling and how it should look. It was the amount of breads i was making like two loaves a week then i started doing cinnamon rolls and another week dinner rolls. It's practice and with scales it would have been tedious, for me again

Most people can go right to the scale. No, It does not take more time for ordinary people to use a scale than for ordinary people to use cups and spoons. You've spent the time so that you no longer need to use either. We aren't talking about people like you. You said, "who has the time?" The answer is, everyone has the time to use a scale, because cups and spoons take time, too. Hardly anyone has spent the time getting to where they no longer need to use cups and spoons. Like you have. You are pretending your experience represents many people. When it represents hardly anyone. "Who has the time to use cups and spoons?" is just as much an issue for you as "Who has the time to use a scale?" Because everyone has that time, who hasn't spent the time no longer needing either of them. You are the only person I've ever met who no longer needs either cups and spoons, or a scale. The rest of us need one or the other and both of them require time.

I made your sourdough recipe last nite and baked the two loaves this morning. I did add olive oil to the dough. My compliments to you! The bread wasn’t just easy to make but it tastes fantastic, mmm so good. I’m happy you used sugar as I’m not fond of honey in bread dough. Thankyou for the recipe. I baked mine for 45 minutes. ❤❤

if you don't already have a smaller pressure cooker, a Nesco digital canner is terrific and builds confidence. They have been on sale this year for about $105-$120 (Khols for example). It will only process 5 pints or 4 quarts at a time, but after the venting for 10 minutes and setting to airtight, you don't have to watch it. It goes for 75 0r 90 minutes (or the time you set it), turns itself off and you don't have to monitor the pressure the whole time. For smaller households, it is nice to have. It can be used like an instant pot or Ninja, but they are not approved for canning and the Nesco is tested and approved. Very versatile :) I'm thinking of getting another to use two of them, instead of one big Presto. My stove is glass top and the digital canners aren't nearly as heavy and easier for me to handle. I know that I'm late to the party, but, pork, as you probably already know, is now considered "white meat" due to the way that most hogs for commercial use are raised (for lean meat and not fat). And this is also why it's difficult to find thick fat back now days. The darker meat on the loin comes from the front of the hog and is a continuation of the meat of the shoulder. It will actually be a little more tender, flavorful and juicier that the white part.

I am so sorry you feel that way. I have only been canning for about 10 years or so, and most of the canning info I have comes from someone who has been canning for 40+ years. One of the things that I have learned, is that not everybody cans the same way. I hope you find what you are looking for.

I use an old ice cream pale and line it with those plastic "Walmart bags" for my garbage pale. works wonderfully. I've been using the same bucket for the last 10 years AT LEAST!

Make tamale pork in chilli sauce and can it. Then all we have to do is make masa and finish tamales. First batch of tamale meat was missing something but fixable.
