These burritos are fast and easy to make, they taste great, and they're only a little over $1 each!
Shopping List: (makes 16 burritos, each about 600 cal)
1 16 pack large tortillas (*make sure it says "burrito" on the package)
2 14 oz cans beans
2 14 oz cans corn (*you can also use frozen.)
A 2-pound bag of rice
A 2-pound bag of shredded cheese
Hot sauce (optional)
Equipment:
Foil
Can opener
Pot
Strainer (optional)
Measuring cups
Oven (optional)
Microwave oven
*The ingredients I listed above are just a suggestion. You can really fill your burrito with whatever you want.
**To save even more money, buy bulk frozen corn, bulk dried beans (and cook them yourself), bulk rice, and cheese in block form (grate it yourself.) This will take more time and more planning on your part, but it will bring the cost of your burritos down to about $1 or less per burrito.
PREP: COOK THE RICE.

A. Bring a medium-large pot of water to the boil over medium-high heat. (This should take about 5 minutes, depending on the strength of your stove.)
B. Add a spoonful of salt.
C. Add 1 cup of rice. (*if you don't have measuring cups, just add a mug full or a small glass full.)
D. Keep boiling the rice for 15 minutes, stirring occasionally and adjusting the heat as needed to ensure that it keeps boiling but does not boil over (water escaping the pot and making a mess on your stove.)
E. Fish out some rice with a spoon and eat it. If it feels done, proceed to F. If not, keep boiling it until it's done (should only take another 5 minutes.)
F. Strain your rice.
BURRITO ASSEMBLY: EAT IT NOW
1. Get out a large, microwave-safe plate.
2. Put a tortilla onto the plate.
3. Add, in no particular order:
1/4 cup cooked rice
1/4 cup beans
1/4 cup corn
1/2 cup cheese
A dash of hot sauce (optional)
Cooked meat (optional)
These ingredients should be arranged in a rectangular pile on the tortilla towards the center.
4. Microwave on high for 1 and a half minutes or until the cheese is nice and melty.
5. Fold the sides of the tortilla inward, then roll, stuffing the ingredients tightly as you go, until you have a sealed burrito. You might fail your first few times, but that's okay. You don't even have to roll the burrito. You can just eat it with a fork if you want.
6. Rest the burrito seam-side down on the plate for a minute. This will help create a natural seal that will keep your burrito together and it will also cool off a little so it won't burn your mouth when you eat it.
BURRITO ASSEMBLY: EAT IT LATER
1. Cut a piece of foil that's a bit larger than the size of a tortilla.
2. Microwave a tortilla for 15 seconds.
3. Put the tortilla on the foil and do STEP 3 in the above recipe.
4. Fold the sides of the tortilla inward, then roll, stuffing the ingredients tightly as you go, until you have a sealed burrito.
5. Fold the foil around the burrito, starting with the sides. Roll tightly, squeezing the foil onto the burrito as you go and make sure there's no tortilla exposed.
6. Keep in the fridge for up to a week.
7. When you're ready to eat, preheat your oven to 350 degrees F (this should take 5 minutes, depending on how strong your oven is)
8. Put a burrito into the oven (still in its foil!) and bake for 15 minutes.
9. Remove from the oven, let it rest for a minute, then unwrap and eat.

I love these. I like to step it up a notch and heat some butter in a skillet and gently brown each side of the burrito..then I like to add some lettuce tomato, sour cream and ranch salad dressing on top and eat it with a fork..it's to die for.

Such a great idea! Just the other day I was in full Chipotle-at-home mode and spent a good hour in the kitchen making cilantro lime rice, chicken braised with chipotles in adobo, pico de gallo, guac, and even my own flour tortillas (the only way I know to match the obscene diameter of Chipotle tortillas), but it is rare that I have the energy and wherewithal to pull off such a feat. If you just have tortillas, cooked rice, and canned beans handy, you can really be set for the week. You could go the breakfast route and add some scrambled eggs as a protein, you could just mash in half an avocado instead of going to the trouble of making guac, and even a good jarred salsa would be fine in this context, I think. Burritos really are an excellent idea for easy, accessible meal prep. Thanks for sharing, Sarah!

The great thing about burritos is my whole family eats them. So everyone is happy including me. I love that I can prepare them in the morning for busy weeknight evenings!

If you have a George Foreman style grill, or I suppose a regular ol' pan on a stove would work too, you could brown the outside of the burrito to give it some crunch and to also seal it closed. This is how I finish off my burritos and also how I warm up ones I'm pulling from the fridge.

This is what I have been looking for, simple no fuss basic burritos you can make quickly and in bulk.I would add a small amount of avocado and either pulled chicked or pork.

Seriously, you were the first person I have ever seen to roll a burrito towards you. Not that it's a big deal or that it matters but I just noticed things like that you always see people roll them away from them never towards them

An easier way to make rice: 1 cup rice to two cups cold water. Bring uncovered to a full boil. Reduce heat, cover and simmer for 20 minutes. Fluff and serve.

This is such a good idea 👀 I'd probably end up eating more than just one lmao but like I've been looking for budget ideas like this that I can just conjure w/ what I have at home at any time. rotisserie chicken meat, salsa, and sour cream would slap so hard on these even if that wouldn't strictly make these budget
