Thanks Jess -- If you have grape leaves you can fold them tightly and put them in the head space pushing down the vegetables

Great video!😍 I just made fridge pickles a few days ago using Boston pickling cucumbers that I harvested from my garden. I did a small cucumber harvest and shared it on my KZfaq channel Life's A Project. Don't ever feel silly for doing these types of videos. They are so helpful and I'm sure many viewers have never made fridge pickles before. 😁

As a young girl I would help my mom can summer fruits and veggies up. Now that I'm much older and want to start my own garden and preserve my stuff, I have forgotten how to do stuff. Its nice to see it all again to jog that old memory of mine. Don't feel silly or not think it's not important because there are people who have never seen it done or its been a super long time since they have done it and need a refresher course. I have been watching you off and on now for a year now. I love your calming ,soothing words of wisdom. I get so excited to see a video. My Benjamin (9) will often sit with me to watch your video. He so can't wait till we start growing a garden so he can go through and munch on stuff like your Benjamin does. Thanks for everything and the we courage to even try.

I’m a new gardener, so I’m learning these skills now. My mom always had a huge garden and did all the canning, root cellar, etc. I wish I had cared growing up to learn what she knew! Thank you for sharing for those of us learning these skills now ♥️

I had a gift of 5 cucumbers from a friend's garden, so I made pickles on Sunday. I put red onion in because that's what I had. And I bought a slicer for my kitchen aid mixer, so I got to try that out too. They were so good!

I love the idea of pickling onions!We often have the rest of an onion that I need to deal with, and love the idea of preserving them by pickling, instead of letting them go bad. 🤪

The idea that the word "pickle" does not automatically imply cucumber slices was completely out of my frame of reference. So may ideas now. I may need a bigger garden.

Thank you! Just what I was looking for. I learn so easily from you. This is my first year with a garden and I am growing cucumbers, zucchini, beans, eggplant, tomatoes, watermelon, strawberries and several types of zinnias and dahlias. Boy is it a lot of work! I am handicapped due to a nerve injury in my leg, so it has been a challenge but also has given me a focus and something to take care of and learn about which was a welcome distraction to pain.Thank you Jess, bless you

I just learned last week that you could eat the pods. I have been growing radishes for years. They are pretty good. Many of mine are hanging to get seeds but I have a batch in the garden that has flower up so I am going to try pickling them.

Please don't feel silly for posting this video. I have been waiting for it. I generally am an idiot when it comes to most things planted, and it's because of your videos that I decided this year to try and grow my own garden. I have learned all about tomatoes because of you, and have five different varieties growing, including Brad's Atomic Grape, which I was super shocked to learn existed. Then super stoked to order and plant. I started this very late for the deep south, so they will be an August/September harvest, as will my cucumbers. Thank you, sincerely!

I love your channel and you are so awesome! I've learned so many things from you. I sat down with my 3 year old niece & explained to her how food grows in a garden & that pickles come from cucumbers. I feel like this is silly to ask, but when you do the cherry tomatoes do your halve them or leave them whole? When i do quick pickles i do a sweet/spicy brine, i use cider vinegar, water, salt, honey, cilantro, peppercorns, fresh jalapeños, ginger, and garlic.. Brussels sprouts and carrots are the best in it!

@@GamesintheAttic All the brassicas pickle pretty well. Not sure I'd quick pickle cabbage but sauerkraut and kimchee are both fermented pickles made with cabbage, at least partially. I like quick pickling cauliflower. I'm not sure there is any vegetable, or fruit, that cannot be pickled. Watermelon rinds make amazing pickles. If you have bad flashbacks to those awful neon red pickled beets from school you should give pickling your own a try. They are very good, I don't make them very often as roasted beets are still better IMO.

Made refrigerator pickles and onions using your recipe - super easy and quick! They are delicious! Sharing a quart with my mom. I would have made my own pickles long before this if I would have known how simple these are to make. Love watching your videos and seeing your "wild" garden. Keep doing what you do - love seeing what your garden produces! Nothing better than eating vegetables you have grown yourself. :)

Jess, please don't ever think these videos are silly because what you're teaching is "so simple". I am a high school math teacher and I always remind myself that what is "common knowledge" in my brain is not necessarily all that common. Nobody likes to ask the dumb questions. You are a knowledgeable, kind, patient and gifted teacher, please never stop sharing your expertise.

Have you had alot of rain. If not, you may be over watering. If you can catch them the day they split you can pull them & wash them. Fry up some green tomatoes. But definitely pull them off. Make sure you have good drainage around the plants. You can add some more silk & mix some vermiculite with it or perlite. Hope this has helped!

Did some quick pickling today for the first time after watching this video! It was so fun, and I am so excited! I spent the rest of the evening randomly remembering them in the fridge and smiling. My husband kept asking “what?” And I’d just say “fridge pickles!” With a big old grin on my face. Pretty sure he thinks I’m crazy 😜 but I had so much fun and it was so easy!!!

Always a good skill to have! Certain Mexican restaurants have excellent dilled veggies in an almost relish form. If you like it you can make it at home!!

Like others said, I'm sure I could have googled it and found out about pickling, but would never have thought about it until I wanted to actually make Pickles. Didn't even consider other things could be pickled! It maybe simple to do, but for people like me, just getting into homesteading coming from city life most of my life, I would have never even considered it. Thanks for sharing!

When I started I didn’t realize their was a difference between canning and “quick pickles” and made multiple batches of jalapeños and just put them in the fridge as fridge “pickles” and ate them for at least a year and never got sick lol. Whoops 🤷🏼‍♀️ Haha

I've been adding to a huge jar of fridge pickled peppers for a couple of years and have never had an issue with it getting funky. I just add more peppers when I have them and top off the liquid if I need to. I'm sometimes embarrassed to admit that to people, because it sounds pretty gross, but whatever. As long as you don't stick dirty stuff into the jar, then I think the chances of nastiness happening is pretty slim between the vinegar and refrigeration.

I made my first pint jar last weekend with onesie twosies from my small garden using just what I had and the tips from your napolito video and black gumbos video. Huge hit,, can’t wait to make more, I used cucumbers, onions, bell peppers and carrots. Surprisingly my husbands favorite were the red bell pepper slices. Now if I can just repeat the recipe 😆. As silly easy as this recipe may seems I’m so grateful you made it! This is the first pickle I’m trying because I don’t have the equipment I need to hot water bath my pickles but I still really need to do something with my harvest so far. Everyone was telling me pressure canning or fermenting but I'm not quite ready for all that trying to start slow lol . Yes! Like 'chiles en vinagre' it usually has oregano and onions in it too,we eat them with scrambled eggs, or milanesas with fries,etc in Mexico.

I add some mustard seeds and tumeric with the apple cider vinegar mixture. It's delicious. Onions are my favorite.

In Australia the main thing I pickle and my first thing I attempted to pickle is beetroots, it’s a favourite. Very similar to the way you just did them then, we cook them until you can push a fork through and peel the skins, slice them, use a brine and pour over then I store in the fridge and they last ages. Thanks Jess for all your advice, can’t wait to try pickling cucumbers and carrots 🥕this year.

Awesome, thanks...I'm in a big city with a couple of yards some friends and I are working...gonna pickle some garlic scapes this way...thanks for the tip as I don't have the gear for water bath pickling!!

Thanks Jess! I was really late getting things in but this will come in handy pretty soon. I would love to see a full tour of the new kitchen and pantry, why you made the choices you did and would you have chosen a different sink if you did not have a dishwasher.

Oh my gosh, yes! Totally forgot about okra! Don't have a garden but will search for the freshest okra I can find, throw in some hot peppers to liven it up! Only one brand of picked okra at my local stores....super tasty, but at almost $4 for about 12-15 small ones is just too much. Lol
