Two years and 6 months ago, I found UndertheMedian when I was unemployed and burning through my retirement. God has been so good to me. This will be my highest earning year of my 35 year career and today, I became debt free. Someone at work asked me if I was going on a spending spree! Ummm....NO! I didn't eat all of those beans and lentils just to go shopping!

I am a youngish agnostic mother of three in a high income household, so probably not your typical fan, but I love you guys so much! I started with nothing in an old farmhouse on a dirt road and I still greatly value frugality and simple living. Your voices remind me of announcers on Canadian public radio shows from the 1080s :))) p.s. If you soak the walnuts in water before you blend them into the tuno salad, you’ll get a creamy consistency a bit more like mayonnaise or sour cream.

Larry and Hope, this was one of my favorite videos you have made. I am plant based and most cookbooks are sooooo complicated and filled with super expensive ingredients. Please write a cookbook. I will buy it immediately!!!!!!!! Do you bake? Bread, banana bread, etc We need frugal bsking recipes,.please!! I also would like to know how you get your calcium!!

Dark leafy greens especially kales and sesame, dark tahini. Yummy sandwich spread is tahini with a tiny smear of yeast extract aka Marmite or Natex. Add some dark lettuce leaves on wholemeal bread, delicious.

Opened front door to find nine or more squirrels eating from the seed I left them for them & the birds, sister says I am also feeding a possum. I was picking up twigs & limbs in the yard short time back, I looked up, limb on the edge of roof, bird approaching, I asked the bird to kick it off so I could put on curb and the bird did so.

I am in need of a bi-pass heart surgery with 98% blockage, while I am waiting, I get heavy chores done a little at a time like moving large sacks of mulch bought on sale. I am also frugal with personal energy but still getting things done.

I will definitely be making the Peanut Stew. One of my dear friends is from Ghana and she always brings me their traditional Peanut Stew when the family makes it. And I absolutely love it. Your recipe looks like it will be so good. I lived in Ethiopia, Africa growing up as my father was stationed there. So I have a great love for the foods from Africa.

@@suzyq1865 Mine friend is also trim and just such a beautiful person. They make me these rice balls with the peanut stew called Omotuo. This is one of my favorite all time meals. I am so thankful for my friend and her family for including me in their traditional foods.

thank you for making vegan frugal recipes! already loved the frugality and budgeting tips but the recipes being plant-based is a huge plus! when you mentioned vegan mayo earlier, you can make it from scratch in a blender way cheaper (1 cup vegetable oil, 1/2 cup unsweetened soy milk, 1 tbsp white vinegar, 1/2 tbsp mustard, 1/4 tsp lemon juice, and a dash of salt)

No can do without Miracle Whip!!! Cold pasta dishes, etc. If you won't eat a mayo type dressing, go with zesty Italian for an awesome cold salad...especially a Greek or Mediterranean

With bulk cooking, load up the oven and cook everything then. Grab the slow cooker,load it up and let ir go. It's super easy. I used to do that all the time,but since I have no space, I stopped. Once my situation gets better, I will be bulk cooking again.

Couple weeks back, bought new clothes dryer from Sam's Club, the took old dryer with them all parts & insulation free, they were puzzled when I ask them to leave the box which I put in my garden to stop weeds.

Good tip about chickpeas. I soak them overnight as it brings more nutrients by soaking and reduce my time to pressure cook to 5 minutes and natural release.

I watched last night and as always not disappointed. It is so encouraging to learn that I also do many of the cooking techniques and learn new ways to fix leftover. The best part I love about preparing many meals ahead are for days that are heavy with appointments, unexpected visits, and you're just plain tired from doing gardening and yard work. Very inspiring recipes, THANK YOU! 😀👍 I have noticed I already go with your strategies (not all but most) for many years already! I was called the "queen of leftovers" as a student back then and it has become some of my normal habit also to feed a small family. I use recipes like you Hope more as an inspiration so they never taste the same. Today, we're only the 2 of us but still not changing habits. I think I can make sth edible out of ANY leftover. I even search the trash can of the family I'm currently working for as a housekeeping help and THEY throw away a lot that's not even perished! LOL 😅 Another tip stretching SALAD you can for example make more portions of 1 iceberg salad if you mix it with dandelion or evening primroses leaves with no extra costs they grow in your backyard, VERY tasty and healthy! Put only 1 tomatoe cut it in smaller pieces just for the flavour and colour. Or take just 1/3 bell pepper to add in instead of the whole veggie. Greetings from Germany, Jesus is coming! 🙏❤️

We got a good deal on a big bag of peppers,mushrooms, and chicken breasts, so we had a stir fry with half a chicken breast, a third of an onion and 4 large mushrooms, a pepper and rice. It made four servings (wraps with cheese for 2 lunches and 2 large bowls for dinners). For dessert, I made a small chocolate banana cake (4 servings) to use up an extra banana before it expired. The other three bananas went into the freezer for a banana bread later on.

I like to take overripe berries and add cornstarch and cook until thickened. This is great with granola, oatmeal, or ice cream. Any vegetables going bad can be cooked and frozen if you can’t consume them immediately. Mash those potatoes and freeze them or dice the onions and peppers or rhubarb and freeze them.

You can use rice in pretty much any dish that calls for par-boiled or cooked pasta. Rice works well in most dishes that call for a sauce ir gravy. And cooked rice can be used to stretch pretty much any fritter, fry cake, or patty dish.

I always have vegetables for stir fry. When I see bagged vegetables on sale, marked down vegetable trays or have bits and pieces of broccoli, carrots, onions, cauliflower , green peppers, etc., I cut what ever I have in bite size pieces and stuff them into quart canning jars. I blend Oriental spices together and boil some of them in a mixture of water and vinegar (usually 1 part water to 2 parts vinegar) then all you do is pour the vinegar and spice mix into each jar so all the vegetables are covered. Make sure you don't have any bubbles. Put the lids and rims on them and put them in the refrigerator. They keep 3 to 6 months. When you want stir fry, you have the seasoned vegetables and any of that extra rice she talked about. Just add meat or tofu, and there is a fast dinner.

My sister has a similar recipe for Broccoli Casserole ( which is layered like lasagna,but without meat),. It is Lasagna Noodles,broccoli,mushrooms,shredded cheese,you can substitute with what you prefer. Then repeat. It is made in a medium loaf pan. Really good. She also use to do a vegan cracker dip,using tomato as the base. That was also delicious. Sharen.

I had a friend gift me a 10 pound bag of potatoes and 5 or 6 garlic bulbs. I cooked and mashed the taters... in the freezer they go. Peeled up the garlic, put it in a mason jar cover with warm white vinegar set in fridge. Will keep for months. Just rinse and use. I despise food waste.

Great tips, Larry and Hope! I appreciate all of your ideas to help during these tightening times. I'd like to add a suggestion on the saving of veggie scraps to include composting after you've made your broth, or not! There's a ton of videos on types of composting making it accessible for those with and without single family homes. The compost is great for home gardens (container gardens included) and saves money in soil additives because you've made your own!

What you call Tu-no Salad I know as Mock Chicken Salad. Smashing the chickpeas with a fork for texture, add onion, celery, salad dressing, 1 t any seasoning blend you prefer. Can add cold pasta! Beans & rice is a staple in different cultures. Search some recipes. My go-to’s are Gallo Pinto and Dominican Rice & Beans,

There is a thrift store my husband and I like to go to and they always have a canned food section where you can get free food and they always have cans of chickpeas and dried chickpeas as well. Winco had a manager's special of two-pound Velvetta cheese for $3.98. Nearly sixty years ago I was introduced to Velvetta & Rotel Tomato's dip. I contacted Velvetta, no one knows how old the recipe is.

Something I do to minimize food waste is anything I can’t turn into stock or that gets a little too old to eat as leftovers is I feed them to my chickens, which reduces my egg costs.

Hi Hope and Larry! Hope do you eat lentils,beans, cabbage, broccoli, cauliflower etc without the effects?? I avoid all of these and eat eggs and lean meats (organic field raised) for protein. I would like to be plant based but am finding it difficult. Any suggestions? I have tried Beano but didn’t work. Love your videos❤

Did you know you can put ripe bananas in the refrigerator, and they will stay ripe and not over-ripen? I buy bananas for my oatmeal, and when the bananas lose almost all the green on the skin, I put them in the fridge. Sometimes, the bananas to straight into the fruit drawer when I get home from the grocery store.

I recently discovered that avocados with some black spots on their flesh are often ok to eat. They don't look as pretty as super fresh ones but still taste good. I usually just eat some as a side instead of using it in a recipe just in case it is a little off. I wonder if some are just brused but not old.

If they fall apart, they probably don't have enough moisture or you are cooking them too long. Mine are a little "mushy" when I put them on the pan. I generally bake my burgers, too, because I make a huge batch of them all at one time.

We generally shop Aldi and Kroger for most purchases. We also have a locally, owned ethnic store that we get specific ingredients from.

I don't want to buy expired meat 5 pounds of meat will last me 6 months to a year so I need some fresh meat to freeze. I try to buy the meat on sale.

I've had chickpea salad.its good, and there are millions of ways to make it. Very frugal,filling,easy. Another frugal idea is taco fries. It's like nachos but with fries instead of corn chips. Yes, you can make it vegan. Or veggie lasagna.use eggplant instead of pasta
