This recipe is an easier way to enjoy this wildly popular Thai street food: Kao Mun Gai or Hainanese chicken rice! The traditional way to make Hainanese chicken rice recipe is a bit of a project, but for this version, I use chicken pieces instead of whole chicken, so cooking time is greatly reduced. Then I also cook the chicken and the rice together in the same pot so it's even faster! If you have some chicken stock on hand, it can really be a quick and easy dinner on a weeknight!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZfaq channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZfaq videos, her cookbook, and cooking classes. The only fermented soy I could find was natto. Will that work or is that too fermented?

Hi. I'm Hainanese too - both my parents are Hainanese! You cooked the rice just the same way my mum cooked it - saute garlic, ginger and rice in chicken fats. Then add salt and broth to cook the rice!

Kao mun gai is my favourite dish when I go to Thailand. In my favourite restaurant they serve it with fried chicken as well and it provides a whole different texture! SO GOOD 🤤.

There’s also Hainanese Chicken Rice in Singapore & Malaysia but we use different sauces on the chicken rice. Instead of a bean paste sauce, we eat it with a garlicky chilli sauce with some dark soy sauce. I’m Teochew and afaik many Thai Chinese (more than half of the Thai Chinese population) are also Teochew, Hainanese is not a very common dialect here in Singapore either but their cuisine has had a great influence on our culture all the same :)

I made this recipe and it turned out amazing. I put a stainless steel steamer basket over the rice and put the chicken in it. It worked out perfect where you don’t get the mushy rice issue.

Omg thank you! My mom never taught me how to cook all the authentic Thai recipes so when I’m craving something I come here! My mom used to cook this in a rice cooker. I’m sure you could also do it in a slow cooker!

Haha I'm Korean and I was quite surprised when you were putting 된장 which is exactly the same one with one in my refrigerator! Definitely will try this!

This is not a Korean and Thai Chinese fussion dish. This is still a Thai Chinese dish but she gave the substitution for Thai Fermented Soybean paste to Korean Doenjang that resembles of this Thai Fermented Soybean paste to it.

@@erdyantodwinugrohozheng The one in her original recipe is actually not Thai fermented soybean, but southern Chinese one, where Thailand got a load of migrants from. There is no soybean used at all in non-Chinese Thai cuisine.

My mom usually prepared this dish with warming the seasoned chicken part in the microwave, after the chicken was cooked, she poured the fat that came out of the chicken in the a cup of cooked rice and stirred well then it became an easy Khao Mun Kai for kids on the day we asked for something more special than the regular thai food. This is also an easy way and yummy way to cook it too. Thanks for sharing.

I make a Greek inspired chicken and rice dish with a similar technique. So much easier doing it this way, and the rice turns out so good with the chicken cooked on top! I'll be adding this to my repertoire!

Thanks alot for sharing. I am also half hainanese! Was brought up by my maternal grandparents who are from Hainan. One thing I missed the most was my late grandmother's chicken rice n was a pity noone learned her recipe before she passed on ): I will try to cook this for my family.

Thank you for the easier method, and for people stuck with boneless skinless chicken, a supermarket with a Kosher section or Amazon has chicken fat in jars though it does have a slight onion flavor most of the time but that works well with this dish.

Another fantastic dish. Time and life saver. It be awesome if you can make a quick and easy to make version of all kinds of Asian food. I'm pretty sure most people don't mind 70% flavours with only 40% effort or less effort.

I made this (not exact to the measurement because I’m lazy) and it was so easy and delicious!!! I skipped the ginger in the rice because I’m not fond of it but it worked just as great ❤️

A thai friend of mine posted a video of the more time consuming ‘traditional’ version of this recipe on her FB page about two years ago, in thai. I cook asian food fairly often, so i had a fair idea of the ingredients. I’ve cooked the ‘make broth from whole chicken and chunks of ginger and garlic and make the rice from that liquid’ version several times. I love the dish. Now i’ve invented a sort of abbreviated version that tastes great but the whole thing takes around a half hour start to finish, similar to what you’ve done here. I make it often and my kids are nuts about it. Your video is fun, thanks...

Kao Mun Gai is something I can eat every day! I've been using my Instant Pot to make it quicker. I use all thighs because when my mom or Khun Yai made it old school, my sister and I would fight for the dark meat :)

Easy to follow and tasty! I made it as one pot dish because we like the toasted rice at the bottom. Pairs well with Nam Jim Hai Lam, the dipping sauce #2 from the longer Hainanese Chicken recipe. Next time I shall add white pepper.

That is a nice looking dish and I may have eaten some of that at some of the parties I went to while in Thailand. I enjoyed the food they served at this one club where staff and customers of all the clubs in the area held their after hours gatherings.
