Perhaps to your surprise, unrefined, organic sugar is less easily consumed by the yeast than refined white. That said, it’s good to be aware that the pineapple yeast itself is a factory for converting sugars out and therefore you don’t really need to worry about empty calories from the sugar type (if it is one you normally might avoid). The white sugar is just a fuel source consumed by the yeast creating a very powerful protein consuming enzyme.
What are Digestive Enzymes?
Digestive Enzymes break down your food so your body can absorb the nutrients it needs to function well. Digestive Enzymes are created naturally in the pancreas and small intestine but they can become deficient over time. They can become sluggish with age, as a result of a poor diet, or due to chronic stress (the most common source).
What helps restore normal digestive function?
* A diet low in fat, sugar and grains and high in fruits and vegetables
* At least 30 minutes of exercise, 4-5 times a week (walking, cycling, hiking, running, yoga, weight training, etc.)
* Chronic stress management
What can we do when we have tried all of the above and we still need help?
You can consult with a health practitioner to get to the root of the issue while introducing natural Probiotics and Digestive Enzymes into your diet.
What are the symptoms of a sluggish digestive system?
* Gas and bloating after meals
* Feeling like you have a rock in your gut (food sitting in your stomach)
* Undigested food in your stool
* Feeling full after just a few bites
* Chronic constipation, chronic diarrhea or both
Where can I find Probiotics and Digestive Enzymes?
Probiotics can be found in health food stores (in the form of capsules, bottled Kombucha, bottled Kefir, and in Sauerkraut). You can also make them at home with a Kombucha Mushroom, Kefir Grains, and much more.

*Remember to incorporate Probiotics and Enzymes into your diet gradually. It may shock your system, so try a small amount for the first couple of weeks. You can then increase your dose every week until you get the desired results.*
How do you make Digestive Enzymes at home?
Please see my video here or you can follow the instructions below:
You will need sugar, a large pineapple, 6-7 lemons, and a container to ferment your enzymes.
1. Ensure that the lemons are clean and dry before slicing.
2. Remove the pineapple peel and the ends of the lemons and slice all
3. Start at the bottom of the jar with a layer of pineapple and follow with a layer of lemons and sugar
4. Once the jar is full, cover it to keep insects like fruit flies out of the brew
5. Rotate the jar once daily to cover all the fruit at the top of the jar with juices. This will prevent any mold from forming while it ferments.
6. Allow to ferment for three weeks
7. Drink 2 tbs or 1 oz one hour before every meal. Take it consistently before every meal for at least one week to evaluate it's effectiveness.
If your symptoms persist try increasing your dose slowly for another week. If they still persist, you may want to explore more natural remedies in addition to the enzymes. I have detailed my personal digestive health mix below.
What makes you an expert?
Although I am not an expert on the subject, I have researched natural digestive remedies a great deal. I am blessed to have a doctor that is aware of the impact of food and stress on the body. He is in fact the only doctor I have met that is on a strict raw, vegan diet and recommends this to all his patients. I have explored many natural options and have shared my experiences and struggles with my doctor. Through a lot of trial and error, this is what I have found to have the biggest impact on my digestion:
1. Stress management (this can be in the form of talk-therapy, yoga, meditation or whatever helps you enter a relaxed and happy state daily)
2. Pineapple-Lemon enzymes one hour before every meal
4. Probiotics daily (preferably home-made kefir, kombucha, sauerkraut, etc.)
5. Kombucha when I feel like having a fizzy treat (usually once daily)
6. Reducing my sugar intake. I accomplished this by journaling with the myfitnesspal app. You can easily manage your intake if you are aware of how much you consume on a daily basis.
7. Eating more raw fruit and vegetables.
8. Exercising daily. Having a dog helps keep me stay active!

Great recipe !!! Please try to use the peels and stems in the same method either with salt like sauerkraut or sugar to make an enzyme cleaner ❤️❤️ even breaks down cat pee and smells great just dilute with robbing alcohol

You really should be using all of the pineapple core. The core of the pineapple has the highest concentration of bromelain enzyme. Since I learned that I always eat it or throw it my Vitamix

Joy, Bloom & Brilliance, Excellent video, I'm aware of the positive benefits of fermented foods, I regularly make and use kimchi, pickles, Kombucha, and coconut almond yogurt, but I was not aware one could make plant based digestive enzymes, Thank you for this informative video, could you tell me, besides papain, which enzymes are in this, also I need the enzymes that help digest fats, I eat allot of plant based fats high in omega 3's, any information you could provide would be greatly appreciated,,,, Thank you Sincerely Michael Hall

Yes! Plant based enzyme are found in fermented jams, apple cider vinegar, and in my sauerkraut too! Check out my sauerkraut video here: kzfaq.info/get/bejne/n7Kkd8mgzNWqn6M.html. The sauerkraut is also packed full of probiotics. Bromelain is the enzyme found in pineapple. Pineapple is also a great natural anti-inflammatory. Thanks for watching!

Michael Hall I heard that avecado has the enzyme that breaks down fat. Lipase or lipease I believe. I do not know how much.

I noticed you cut off the core? If I am not wrong, the core has the most Bromelain enzyme making it slimy but that is why the pineapple is great against inflammation of lungs and sinus. So..why dont you use the core? I drink pineapple juice to fight coughs and it seems to work well

How can refined white sugar be good for us in any way, shape or form?

All alcohol goes through the fermentation process. Like how the sugar in grape juice is converted into wine, the sugar in this jar will convert to alcohol/organic acids. No sugar will be present when it is fully fermented. It will have converted. As my mentors have often said, the sugar is not for you, it is for the yeast. The enzymes in yeast break down sugar into alcohol (ethanol) and carbon dioxide (carbonation),

Hi Aza! Some people may have sensitivity to the organic acids. In that case they can start with small doses for the first couple of weeks and work up from there. Each batch lasts me a few weeks and I whip it up when I feel my pancreas can use some digestive reinforcements.

In this case, we ferment the fruit so long that all the beneficial elements are leftover in the juice. What remains is the fiber which isn't very tasty. It can be thrown in the compost though.

You drink it in shots. Like in a small espresso cup or shot glass. Start with a tablespoon so as to test your body's reaction to it, then work your way up slowly.

I take high quality enzymes. 3 to 4 with each meal. Would this replace that ? Also I am making my own Probiotics now and use a capsule of probiotics to kick start the process. I wonder if putting a digestive enzyme with some water and salt would grow them like a farm ?

I couldn't comment on the probiotics although you can make coconut yogurt from probiotic capsules and coconut milk. You can try the homemade enzyme and adjust the dosage to your specific needs based on your experience with your current enzymes.

Hi Christina, Theoretically, it should still ferment with the sugars that are present in the fruit although I haven't tried it. If you are going to try, I recommend using a starter culture to help the fermentation process along. You could try a tablespoon or so of sauerkraut juice. That is how I make fermented berry jam. If you do try it please come back and post your results!

Yes, definitely! You can use organic sugar, rock sugar, brown sugar, and honey. I used white sugar because it is deeply discounted during canning season.

Like wine and most other fermented foods, no preservatives are needed. This is because the "good" bacteria prevents the growth of bad bacteria. As long as the good bacteria is still present, the bad bacteria will be kept at bay or starved. Depending on what and how foods are fermented, they can last for years. Always watch your batch though, and if you notice something that looks like mold, discard it right away. I am not familiar with the skin care uses though, so unfortunately I can't comment on that part of it.

I made lemon enzyme with a few slices of grapefruit. I wonder why is my lemon enzyme doesn't produce bubbles? I read that when bubbles are formed, that shows fermentation is taking place but it has been almost a week now yet no single bubble being shown in the jar. Does that mean no fermentation has taken place at all?

That is alot of sugar or it looks alot. I use one cup for gallon, and let the ferments eat the sugar, I don't want to eat sugar.

Good day. You can definitely use fruit waste to make fruit enzymes. From what I have seen online, many people are using fruit waste enzymes to make household cleaners. I have not done this myself, but some people swear by it.

Yes, correct. The first isolation of bromelain was recorded by the Venezuelan chemist Vicente Marcano in 1891 by fermenting pineapples. Source: en.wikipedia.org/wiki/Bromelain

Perhaps to your surprise, unrefined, organic sugar is less easily consumed by the yeast than refined white. That said, it’s good to be aware that the pineapple yeast itself is a factory for converting sugars out and therefore you don’t really need to worry about empty calories from the sugar type (if it is one you normally might avoid). The white sugar is just a fuel source consumed by the yeast creating a very powerful protein consuming enzyme.

Hi Bennie Leung. This quantity lasts me a few weeks. Since fermentation has been used to preserve food prior to refrigeration, it is meant to last. Although it would be best to experiment for yourself, it should be safe for up to a few months in the fridge. Maybe even more.

I read another recipe that says 'a cool dry place'. I personally think counter would be fine, I'm going to keep it from direct sunlight.

Preferably in a cool dark place. I keep it in the cupboards under the counter out of sunlight.
