This is one of my favorite things to meal prep for quick and healthy meals throughout the week.
Skewer:
1 lbs ground beef
1lbs ground bison
1 egg
1 caramelized onion
4 cloves caramelized garlic
1 tb minced parsley
splash olive oil
1/4c bread crumbs
Salt and Pepper
Rice:
2c Jasmine Rice
2 leeks
4 cloves garlic
1 tb minced ginger
4c chicken bone broth
Sweat the leeks with garlic and ginger, toast rice, bring to boil them cover and simmer until all liquid is absorbed.
Zucchini
Slice hot dog style
pat dry
Spray with oil
Salt and pepper
