A Blondie is akin to a Brownie but without Cocoa. These Lemon Blondies are undoubtedly the best dessert you could ask for when you crave for something sweet and light! It tastes of the citrus freshness but long before that you are blessed with the breeze of lemony bliss :) It's a little bit of heaven on earth... Mog Asum ❤️ Ani Dev Borem Korum
1 US Cup= 240 ml
Ingredients:
110 grams or 1/2 Cup Salted Butter
130 grams or 2/3 Cup Powdered Sugar
2 Eggs, at room temperature
1/2 teaspoon Vanilla Essence
Lemon Zest of 1 Lemon
Juice of 1/2 a Lemon
120 grams or 1 Cup Flour, sifted
1/4 teaspoon Salt
Bake at 180°C for 15-16 minutes in an 8"X8" baking tray for best results.
For the Lemon Glaze:
100 grams or 1/2 Cup Icing Sugar (Powdered Sugar can also be used)
3-4 Tablespoons of Lemon Juice
Allow the Lemon Blondies to cool and then spread the glaze over. Then, let the glaze harden for 15-20 minutes.
Cut into squares and enjoy the freshness of Lemons!
They can last at room temperature for 3-4 days; if you wish to store them longer, do refrigerate them.
