EASY No-Bake Strawberry Cheesecake is whipped, creamy and loaded with fresh strawberry flavor. The amount of strawberries in the cheesecake is impressive and you will love the simple crust.

Ingredients for Graham Cracker Crust:
1 3/4 cups graham cracker crumbs from 12 whole crackers
1 Tbsp granulated sugar
8 Tbsp unsalted butter
Ingredients for No Bake Strawberry Cheesecake:
1 lb strawberries rinsed, dried, hulled & chopped
8 oz cream cheese at room temperature
2/3 cup granulated sugar
1 cups heavy whipping cream chilled
12 oz mascarpone cheese chilled
2 Tbsp lemon juice
2 pkt unflavored gelatin (14+ 1/2 cup cold water
Topping/ Decor:
1 cup heavy cream
2 Tbsp granulated sugar
1/2 tsp vanilla extract
6 strawberries halved

I made this!!! And I must tell you that this was the yummiest cake I have ever made that tasted less processed and more natural. The flavours were so fresh. This was the first time I made a cheesecake and I’m so glad I found your recipe. The guest star was also adorable

Hi Natasha! Just made your wonderful cheese cake recipe. What I like the most is not folding or wanting soft peaks before combining it. I made a small cake with gluten free crust and a regular, Both turned out great. I also added shaved chocolate and strawberry puree on top. Cheers!

I made this recently and it was good! However, it was very fluffy, jello-y, and not much of cheesecake taste/texture. I was thinking of omitting the gelatin next time. Any suggestions on what I can do to make it more cheesecakey, or was it just me that made it wrong?

Maybe you can try adding less gelatin like use half of what she used so it holds shape? But still more cheesecake-like?

I just made this recipe now but used a ready made crust. I should say 2 crusts because the filling turned out to be enough for two. It sure looks good and I can’t wait for it to chill the 4 hours. LOL.
