So strange to imagine a couple hours later and you had the baby. If you hadn't told us I would never have guessed you were in labor for one of the recipes. Tray bakes and one pan dinners are often on the menu here, even if we're only a small family of 3. so easy to prepare ahead and very handy to use whatever you have in the fridge. Think I'm going to try out the chicken one and the one with brussel sprouts sometime this fall. My daughter loves brussel sprouts, but traditionally they are served simply cooked here and perhaps mashed with potatoes (it's called stamppot in Dutch and you can use different veggies for it and make it in large amounts). I never knew what a Dutch oven was, but seeing it now I realize that indeed most households here in the Netherlands have such a pan, though we call it a braadpan, used most often for browning and simmering meat on the stove. I have a couple in my kitchen as well but hardly ever use then :)

I don't know why, but knowing you were going to have your sweet new baby later that night made me remember.... my twins were born on November 18 and Thanksgivng that year was Nov 23! With two newborns to care for - I literally forgot about Thanksgiving! My in-laws called Thanksgiving morning and announced (not asked lol!) that they were bringing the turkey and would be at our house at noon. We were so confused? And then it dawned on us! It was Thanksgiving! Arrrrgggghhhh!!! We had not made ONE preparation for a meal or for company! We managed to pull it off! I can laugh about now

At my minimalist house, I don’t peel potatoes 😉 just scrub and trim. Yukon Golds are great for this as well as sweet potatoes.

Oh it all looks so good, as usual. I know you went into labor this day but wondering if it was much later than when u made this vlog. You look so good BTW, but you always look great during your pregnancies. You certainly dont have yo worry about food while you are taking your 2-3 weeks off....i hope its closer to 3 but be careful with your BR being on the 1st floor some children might forget you're recovering & resting. This reminds me of this winter when I had my second baby. The midwife came to my house around 2pm, and she said that i will probably give birth around midnight, cause i was talking normally, walking around the house and making coffee for everyone like nothing was happening. At 6pm the baby was born. I also wanted to finish up stuff before the baby comes because I have no extra help around. 😅🌻
