This rustic summer salad breathes new life into leftover bread and elevates the vibrant flavors of juicy tomatoes, refreshing cucumbers, and sweet onions. Buon appetito!
Ingredients:
Bread: fresh or stale! I used Ciabatta
3 or 4 ripe tomatoes
1/2 to 1 sweet onion such as Vidalia
1 large or 2 small cucumbers
1/4 cup or more of Extra Virgin Olive Oil
Salt to taste
Basil to garnish
Notes: Personally, I omit vinegar as tomatoes are already rather acidic. You may add vinegar if you would like it to be tangier.

I’ve enjoyed that beautiful view for 45 years. I had no idea that we had such a wonderful chef on our street. The panzanella salad looks delicious. Thank You Giovanna for bringing back wonderful memories of the street that I grew up on and being with my family again ❤️

I worked at a pizza place that was ran by a Sicilian family. The owners could barely speak a word of English. The mother made two things (out of the innumerable delicious meals she made) that I couldn't get enough of. One was somewhere between soup and pasta and it had small pieces of spaghetti, hamburger, potatoes and I know there was cinnamon maybe peas. Delicious. The other was a pizza she made around the holidays that had somekind of anchovie sauce and a very different dough from the pizzas they sold. If you know either of these and would find them to be a good video, I would love instructions on making them. I really like your channel. Thank you.

Those tomatoes looked so good! We make it but we cube up the bread. It really captures all of the goodness of the summer ingredients. Beautiful poodles!

Looks great! Thanks, Giovanna for the recipe. Your poodles are so cute, especially the older one sitting on your lap. Looks exactly like my Frankie who passed in 2021. I'm going to make this recipe for my nephew's graduation. And I'm going to try the technique for toasting the bread over the flame. A lot of the recipes that I saw call for salting the tomatoes to remove the juice and adding vinegar. I am Italian-American and we have never salted the tomatoes to make a salad. I'm going to make this for my nephew's graduation party. Grazie mille!

We had a giant pizza the other day, however, it had so much crust, so I cut it off and made some garlic croutons! they turned out delicious. Wonderful panzanella, those tomatoes must be delicious.

In Bulgaria, we make similar salad. However, we chop and add parsley inside, and depending on the season and a fresh green pepper. We have never laid it on top of a bread. Many people love to dip bread in to the salad sauce or if you are kid you will get away to lift the bow and drink the juices. I love salads it has been tradition in our family every dinner you eat some kind of seasonal salad as a starter before the main food. Every single time. Yesterday for example we had sour cabbage salad with red pepper and olive oil with slices of salted pork fat from Bulgarian White Pig (Much Better than the British lean breeds. When I say much better i mean it.) In order to experience the taste of such salad it’s best to go visit grandma in the village in hot summer day. When she picks the tomatoes from the garden are warm from the sun. Every ingredient she put’s in the salad has been picked minutes before being chopped. The smell is amazing. Never have I felt this smell of real tomato, real cucumber in the UK for more than 15 years now. Ahh memories, memories barefoot with unwashed tomato in the hand and a chunk of feta cheese at the other, not top just shorts walking around the garden and eating.

Although tomatoes are. already acidic, a drizzle of vinegar sparks up the Panzanella, as long as it's more olive oil than vinegar!

I discovered your channel recently and love watching your videos. You make everything so clear. I grew up in Melbourne, Australia where there are many people who came from Sicily, so I am familiar with some of your dishes (although caponata in Melbourne is very different from yours!). I have wonderful memories of having weekend lunches with my family's friends who had come from Sicily and they would bring a cold picnic pasta dish (not a pasta salad). Is that something you know? I would love to know how to make that. Also in your video on the lamb pie for Easter (most interesting!), you mention at the end an orange salad which is very common in Sicilian food. Could you do a video on that please! Very best wishes from York, England. (P.S. I have ordered your Sicilian Feasts cookbook, greatly looking forward to reading and trying recipes from it).

without cucumber, we just call it tomato salad, I would add also a drop of balsamico, oil, and a pinch of slat and pepper.

Carissima Signora, mia zia Rosa diceva sempre che il mondo é bello perché siamo tutti diversi, e possiamo tutti imparare l'uno dall'altro. Naturalmente é anche bello incontrare chi viene dai nostri paesi. Mio marito é Americano con il Padre di origine Italiana da vicino Pompeii, e la Madre Irlandese. Abbiamo una figlia meravigliosa che ha preso il meglio delle due nazionalitá!
