2 medium sized Carrots, chopped
1/2 cup Tomato Purée
1 Scotch Bonnet Pepper (left whole) or Habanero Pepper
Marinade:
8 Chicken Thighs and/or Legs
1 tsp smoked Paprika
1/2 tsp ground Ginger
1/2 tsp ground Allspice
Salt/Pepper, to taste
1 cup chopped Yellow Onion
4 Green Onions, chopped
6 Garlic cloves, finely minced
1 tbsp Brown Sugar
2 tbsp Browning Sauce
6 sprigs fresh Thyme
2 Bay Leaves
