If you’re looking for an amazing vegan ribs recipe, look no further. Today we’re not only going to make ribs out of seitan using vital wheat gluten, we’re going to use a bone replacement as well as utilize a special ingredient that I think might have tons of applications for other plant based meats in the future.

RECIPE:
Dry:
370g Vital Wheat Gluten
2 T Chickpea Flour
Wet:
1 tsp Baking Powder
1 tsp Fine Sea Salt
1 tsp MSG
3 Tbsp Oil
1 tsp Apple Cider Vinegar
4 Tbsp Soy Sauce
2 Tbsp Vegan Worcestershire Sauce
1 Tbsp Liquid Smoke
400-425g can Cannellini beans
350g Pressed Tofu*
*water packed medium or firm
Moo Glue Slurry:
2g TI
8g Water
Method:
Whisk together the dry ingredients in a bowl
Blend together wet ingredients
Combine the wet into the dry
Knead until 100% combined and form into a log
Rest for 30 min
Stretch dough then cut in half
If using the bones, roll one side out into the size of a rack of ribs and the other into a long shape. If needed rest for as much time as you need to be able to roll the doughs out
If no bone, roll the other sides out into a rack of rib shape and skip to the baking step, cooking them separately cook them separately.
Cut strips long ways off one of the doughs and use the long strips to roll them around the bones tucking in both ends
Make TI slurry by whisking together 2g TI and 8g water
Coat the rack of rib shaped side generously with the slurry
Coat each of the gluten wrapped rib bones in the slurry and place them on the slurried part of the rib dough, nestling them next to each other
After all ribs have been placed, cover with parchment paper weighted down with books or something heavy and rest for at least an hour.
After resting, take off the books and parchment paper, add to baking pan and bake at 350F for 30 minutes
After baking, simmer in veggie stock in the oven for 2 hours at 350 degrees flipping halfway through and checking every ~30 minutes to ensure that there is enough liquid. At the end of the baking, your the roast should be at a temperature greater than 170F in the middle.
Rest for 8 hours in simmer liquid
Final Prep:
Pat dry
Brush with oil
Sprinkle MSG on top, about a Tbsp
Bake at 350F for 15 min
Take out and coat generously with BBQ on both sides
Bake again for 15 min
Broil for 3 watching it carefully the whole time, BBQ sauce can burn quickly due to the sugar. Take out once you have a nice light brown char on the top.
Lightly sear with culinary torch if desired, cut as close to in between the bones as you can, and serve!

Disclaimer about the fauxbones: They did arrive to me with an "industrial" scent and I boiled them for about 45 minutes, changing the water every 15 to get rid of the smell. A few other people in the comments have reported this too, so I figured I'd pin a comment about it incase you're considering purchasing them as I'd also like to know this info. I'm not affiliated with them other than them sending me product, so I too only know what is written on their website regarding materials used and while I have no reason to think that they are not food safe, I cannot personally vouch for any of their claims.

I tried that, didn't work. I have now covered them with baking soda, hopefully that will work. Interesting though that the wing bones didn't have a scent

I wrote to the company concerning the comments on youtube about the "Industrial" scent on the faux Bones and here is their reply. Faux Bones Thank you so much for your inquiry. We have worked tirelessly to remove this scent from our wooden bones. We recommend washing in the dishwasher and then soaking them in a brine (water, salt and seasonings of your choice) for at least 2 hours before using. One big part of ribs is the FAT! Would you consider trying these with the fat substitute in recipes like Veggie Anh’s vegan pork belly, made with tapioca starch, rice flour and refined coconut oil? I’ve had this pork belly and it AMAZING, never had vegan meat this good. I would love to see your take on these beautiful ribs with that fat! 🙏

Something about “meat glue” is very off putting. I am not Vegan but trying to eat healthier and add more plant based foods to my diet. They do look very realistic as far as mock ribs go.

Cause they wanted to eat meat / food as they grew up with, but not want to kill / torture animals 😉. How cool would be just to eat all kinds of delicious things without needing the mass industry of (most of the time baby / very young) animals to kill? All thanks to creative minds 😄

When I was checking contents of "moo glue", it wasn't specified what kind of gelatin it contained. I know marshmallows sold in Walmart states Kosher, but that's fish & I don't eat fish.

I grew up eating Texas BBQ until I met this guy and went vegan. Eating these ribs with some classic bbq plate sides was definitely nostalgic! So fun to eat messy ribs again. Thanks for feeding me amazing food every day Mike 😘

I don't see why not! I've never used a smoker before, but my guess is that it would need to be pre-bake and simmered and then finished in the smoker or on a BBQ. The purpose of the final cook in the oven is to get it hot as well as caramelize the sauce. It is already edible after the final rest in the stock. Also - the better the stock, the better the taste!

Do you have to buy new bones every time? It seems like they would be hard to get clean enough to put in food again

No, you can reuse them. This footage is from my 3rd test using these. I recommend cleaning them throughly and boiling them after each use, making sure to let them thoroughly dry and storing them in a container that allows air to come in and out like a mesh bag.

I made these a few months ago - texture, look and taste were marvelous but the smell of the bones - yuck! I emailed fauxbones and they sent me new ones, the smell was lessoned. I do have a question - what do you think about using the 'spare' ribs for a top layer?

Unfortunately neither Moo Glue nor other meat glues are vegan; they contain casein (milk). Otherwise great idea and we'll try the recipe soon :)

There's gelatin in Moo Glue so I doubt I'll even mess with this one. Was raised vegetarian & strive towards a vegan diet. Something about eating dead animals just turns me off even at 70+.

Question about this, not sure if you'll answer, but would methylcellulose work instead of moo glue? I've seen that methylcellulose binds burgers together.

No, unfortunately. the Moo Glue (TI) works to bind the proteins back together which is completely different than what methylcellulose does as a functional ingredient (to my knowledge). Looks Super cool your Artwork. I would recommend to separate the Seitan dough into 4 parts. Throw each of these parts into a Hightech Blender like the vitamix. blend each of those for 1 min until the dough is super smooth. Then reunite the doughs and start your Artwork like you did. The advantage of this technique is that the dough is now stretchable an develops better fibres during the stretching process (wrapping it around the bones ist can be stretched). In Addition to that the dough beeing super smoth now, the rips can be glued to the other part of the dough, leaving out the transglutaminase...

Interesting, if there is a way to do this without the TI than that would be idea. I haven't had any luck with using a food processor or blender to work dough personally, but it is possible that I'm just doing it wrong. Anything to add extra texture to the final product is a good thing for sure.

No, unfortunately as the TI (Moo Glue) bonds the proteins back together. I haven't played around with methyl cellulose that much, but I know that it has a different purpose as a functional ingredient and if added will likely only change the texture. Something to try for sure!

Today I was thinking that I can’t remember when was the last time I had ribs. Is not necessarily that I missed them dearly, but wanted to see a recipe for vegan ribs…. You use the correct "moo Glue" TGA product for binding the tofu protein, but your viewers may not catch it. There are at least 4 major types of Moo Glue, containing various types of helper proteins in the mix. TI does not contain those helpers and is the only type that works with tofu. And, just as the TGA is both a natural compound found in the body, so are glutamates. No-one has ever been able to duplicate the issues some people have said they experienced after eating MSG. It's all a farce or conspiracy. So, thanks for "poo-poo-ing" it as a problem. (In truth, just as MSG has sodium im it, any problems are no difference than those experience from overdoing salt.)

Yeah they did. I boiled mine for about 45 minutes changing the water every 15 min. That got rid of the smell.

I haven't had ribs in close to a decade, so I can't speak to if they were close. Would they fool a meat eater? No. Are they satisfying and fun to eat? Absolutely!

I don't think so, this would probably dry it out, however, I've never done it!

It's because it cooks off. To my knowledge it is used in most factory made baked goods you buy at the grocery. Since it is destroyed in the cooking process, it doesn't have to be listed on ingredients. They also use it to combine poor cuts of animal-based meat. You can see people doing it on KZfaq if you look for it. I'm no nutritionist or safety professional, so grain of salt as always which everything you read on the internet.

In this one the hardest part is the bones and the TI. It is pretty simple if you roll them out and shape them like you want and then pre-bake/simmer from there. Seitan making can be intimidating for sure, but essentially it is mixing seasonings with Vital Wheat Gluten to make a dough and then cooking the dough. Other than the faux bones and Moo Goo, which appear hard and expensive to get in Canada, Nice recipe. I,ve tried a few other rib recipes and this one looks FANTASTIC but I’ll be using bamboo sticks cut down which cost practically nothing as the faux bones would cost ea. serving an additional $10, or more. The. Moo Goo cost 3x the price of it in shipping cost, so unless I can find it cheaper, I’ll have to omit that.

Nice, any typical bone replacements will work for sure. I just had these and decided to give them a go. You could just wrap the bones/bamboo individually if you don't want to use the TI, they will just be round which is fine unless you figure out a way to compress them. If you do let me know how it goes. The Faux Bones held up pretty well in the three tests that I used them for (baking, simmering, torching 3x) so from my experience they should last a while and are not thrown out with each serving.

Based on your video and the claims on the Faux Bones website, I bought a pack of the bones but they are made in China of an unknown wood and SMELL TERRIBLE. Their website says that they are food safe but there is no documentation just a bunch of readily available icons. The website says "The wood material used for the faux bones is strong food grade" whatever that means. Given the smell and track record of manufactured food imports (remember the melamine in dog food?) I am very reluctant to use them. Not all wood is non-toxic and there are toxic woods that should not be used in contact with food. Also there used to be a negative review on their website which complained about the terrible smell which they have removed which to me is suspect that it is a more widespread problem. There are 102 comments on this page but only 9 on their webpage and all 5 stars-- always suspect. Faux bones are a good idea for playing with the visual aspect of vegan food but I am not sure these versions are the right option without better safety testing.

Sorry to hear that - mine also had a smell but that went away after I boiled them several times for about 15 min each time. Unfortunately I don't know anything else about the product besides what is on the website. Definitely something someone would want to think about when making this purchase.

Hello moo glue is not vegan according to the ingredients. They contain the milk protein sodium caseinate
