I love when she hosts she is always so inquisitive and humble and still knowledgeable but yet gives the chefs and their assistants a platform to explain their techniques and dishes and intake on everything.

I stumbled upon Plateworthy yesterday and love everything about it. Nyesha is an amazing host with a great hand for conceptualising and cooking, and has such a great personality and knowledge in order to have a casual but detailed conversation with the great chefs she interviews. Definitely looking forward to more her. Also Nyesha means rain in my country (my favorite weather) ☺️🌧️ I forgot to mention how fantastic this recipe is. Ive cooked chicken in so many ways, milk-roasted chicken being my favorite so far, but this is just the right amount of interesting and exciting for me to try and explore in different ways. I love the thinking behind it, and that sauce looks delectable (definitely see that he skipped a couple key steps there lol), and the chef is pretty cool too 🤘🏾

i like to see michelin restaurants work with chicken. It almost never happens and it´s a shame. it´s not because chicken is cheap it can not be good. btw the chickens that high-class restaurants use are so much better!

High end restaurants tend to opt for more flavorful poultry like pigeon or quail. Chicken needs a lot of help to taste good and it's very easy to overcook and dry out.

Great creative chef Chef J.Kent. But what an awesome inspiring dish as well. So much i learned watching this from the the creative storyboarding, the marinades and types, the cooking of the chicken and the plating and styling with the salad pieces. Very creative.

Here in the Philippines what we use for marinating is what we call calamansi or lemonsito a small citrus lime and its the best. I have tried all of those citrus marinade but the calamansi/lemonsito is on a different level. One advantage of using those calamnsi is the short time needed for marinating. It will only take at least 1 hour to get the marinate into the chicken flesh

Crown Shy is the best restaurant in NYC! I frequent this spot at least a few times a month. This is CS’s signature chicken dish which I have had many times. Totally lit!🔥

Chicken Marinade- 4% salt brine Lemon juice Lime juice Orange juice Grapefruit juice Ginger juice Habanero pepper ferment juice Habanero Star anise Black pepper You're welcome!
