What goes better with aged beef than whiskey? This week on The Meat Show, host and professional carnivore Nick Solares is joined by Consumed’s Kat Odell at The Beatrice Inn, a chophouse in New York’s West Village. The pair sample some of chef Angie Mar’s 160 day-old steak that has been aged in Jack Daniel’s - for all of the flavor but none of the bite of the booze. mmm yes I also experience this gamey but deep flavor when I eat a 5 day old mcdonalds chicken nugget.The extra mold really ties in with the unique barbeque sauce mmm yeessss.Its such a sophisticated flavor that the poor will never experience.

I assume truffle's pretty swell but due to its rich flavor it seems like it'd somewhat get in the way of the flavors you'd be trying to taste from the dry aging and whiskey. I'm sure this tastes awesome so I'm not doubting the overall quality but rather pointing out that it seems like extra effort and cost that may not really accomplish all that much extra since the meat is probably phenomenal on its own to begin with.

This is THE best steak I have ever had!! Angie is a spectacular chef and few know their steak/food information more than her. Angie is brilliant and is a mind blowing chef. The less Nick says, the better, for my liking. I want to hear from Chefs the calibre of Angie and many others.

I have actually tried aged steak like this aged with whiskey for about 100 days. It smells like a wet sock worn by a football player for 100 games straight without washing. It was extremely tough and tasted like water that's been in a moldy plastic water bottle.

and the way the meat presents itself so funky and furry is by in the forest, the moisture from the trees conjoin with the white blood cells, and actually, this creates a new element in the periodic table that adds that furry and funky flavor to it.

Seriously though, Nick isn't that bad. He has a lot of knowledge and sounds like he knows what he's talking about when breaking down the meat and its sections. That said, Kat really is monotone just like in the sushi show and doesn't really add much depth to this episode.

I know dry aged meat tastes a little bit funky, but isn't that a little hard to judge with a bunch of truffle served over it? Sure, I'd do it if money was no object (because why the hell not), but tasting it (as a concept) just seasoned well, and without any sauce would tell you the most about the effectivess of the technique and the effect of the Jack Daniels.

people back in the days used to love this stuff because in a way they had to go against the grain, and bring back this amazing ancient technique of preserving meat so it doesnt go bad because they didnt have fridges, and in the process it made the meat taste different, and nowadays the new generation came, and they want to hate or go against the grain for people going against the grain by providing dry aged meat, people always gonna hate, people always gonna pick on others, even if they know they are in the wrong, comments here make me feel bad for the hosters of the show, just keep doing what you love.
