I am confused. The traditional turtle is the diamondback terrapin, that was used in soups. The owner said it was the Snapping Turtle, which has certainly been used in the south, but I do not believe it was wide spread commercially. Then Eater showed the painted turtle. wtf? What kind of turtle was this?

Had this at Galatoires in 1975. Incredible stuff. It compares with the Snapper soup they served at Bookbinders in Philadelphia. Best turtle soup ever was at a restaurant in Louisiana about 2 miles off I-10 near Lake Charles. The place didn't have a sign out front and was on a dirt road. The food was incredible and the Creole waitress was miss universe quality beautiful!

everything looks delicious except the egg. I guess they finish the soup with egg, so Galatoires , it would seem, could delete the chopped egg. the bread looks very pleasing as well.

not 1 of those were a snapping turtle in the pic mostly red ear slider but the best way to have snapping turtle is to take the legs, neck, tail, and loins lightly cover in flour slice up a onion put it in a pan on high put the turtle on the onion and sear both sides then put on low for about 2 1/2-3 hour till ur fork doesnt stick and then add some milk and flour to grease in the bottom of the pan and make a gravy and put it over rice and mashed potatos
