SAIGON, VIETNAM - Phở or Pho, is nothing short of noodle soup perfection and a cornerstone of Vietnamese cuisine. If you are think about Vietnamese food, pho is almost certainly a dish that comes to mind. Pho is everywhere in Saigon (Ho Chi Minh City), from restaurants to Vietnamese street food stalls. You are never far from the best bowl of pho you have ever eaten. Today, I head to District 1 Saigon to eat my first bowl of pho in Saigon.
Pho is a traditional Vietnamese dish that consists of a clear broth, rice noodles, meat (typically beef or chicken), and various herbs and spices. It is a popular street food in Vietnam and has gained worldwide popularity in recent years.
The history of pho can be traced back to the early 20th century, when Vietnam was under French colonial rule. During this time, the French introduced the concept of beef-based broth and noodles, which eventually led to the pho as we know it today. However, there is also contention with this with people saying it came down from the North via Chinese immigrants who introduced beef noodles. Likelihood is that it was a combination of both. Pho is typically served with a side of fresh herbs, lime wedges, and chili peppers, which are added to the broth to create a unique and complex flavour.
The baguette, also known as "bánh mì" in Vietnamese, is popular so in Vietnam. Introduced during the French colonial period, the baguette has become a staple of Vietnamese cuisine and is commonly found in street markets, food stalls, and bakeries throughout the country.
Vietnamese-style baguettes are typically made with a mixture of wheat flour and rice flour, which gives them a lighter and crispier texture than traditional French baguettes. They are also usually shorter in length and thinner in diameter than their French counterparts.
The most common filling for a Vietnamese baguette is grilled or roasted pork, which is usually seasoned with a combination of fish sauce, garlic, and sugar. Other popular fillings include pâté, tofu, egg, and various types of cured or pickled vegetables such as carrots, daikon radish, and cucumbers. However, at this bakery they are taking French boulangerie to the next level and creating incredible bread and pastries. The quality is right up there with bread that I have eaten in France. Rather than the traditional meat filling, they have a version made with butter and red bean. Delicious.

Vietnamese foods are really popular in Korea. But I was surprised how different the tastes are when I ate them in Vietnam. Actually, local foods have much more flavors.

It's because they had to not only adapt the taste for the locals, but also do the best they could with the ingredients they have. There's quite a bit of things that don't exist in Korea but is essential to Vietnamese food or some things are just expensive. For example, I've noticed a lot of Koreans don't like cilantro/coriander so they leave it out for the Korean pallette. But it's such an essential ingredient in Vietnamese food.

I am Vietnamese living in Canada and I confirm this. I find only Pho in Canada is better than those in Vietnam and my friends agree as well. Probably the quality of beef here is much better and the bones used to make Pho are more generous. The rest of the Vietnamese foods is better in Vietnam.

Man, those breads would have been great to my breakfast, thank god you uploaded this after my breakfast so I couldn't compare visually the bread I had this morning! Gotta love fresh baked bread, nothing really beats it Kinda supriced you never had Pho before, looked like a great bowl!

I don’t classify pho in England as real pho, so I didn’t count it. The bread was crazy good, as good as some of the stuff I ate in Paris that’s for sure.

​@@missouriteebomb6337 yeah, only in the Southern Vietnam. Ordinary Hủ Tiếu is different from Hủ Tiếu Nam Vang. Nam Vang is a place in Cambodia. Chinese immigrants (in Cambodia) made it and we followed the trend but we also adapt it to fit our taste, add more or less toppings 😗 There are also Hủ Tiếu Mỹ Tho (Mỹ Tho is a city of Tiền Giang province) and Hủ Tiếu Sa Đéc (the Sa Đéc hủ tiếu noodles is different, more chewy. Sa Đéc is a city of Đồng Tháp province) 😗

There are more than 23 different types. I don't know for certain the number but I have read there are over 120 different type of noodles dishes in the Vietnamese cuisine.

only 23? there are at least a dozen noodles x a dozen meats before getting to seafood... over 100 not counting vegetarian: lotus, potato and pumpkin, eggplant, cajun creole trinity, etc. more jungle meats, so on and so on. as for noodles: udon, barley, buckwheat, chinese egg noodle, japanese ramen, italian egg pasta, communist potato noodles (poland), rice noodles 20+ ways, tapioca, radish etc as noodles, french wheat no egg. and then the sizes and textures, pre-fried, pre-soaked, redhydrated pre-dried, wet, extra wet. wrinkly, cellophane, thai needle thin, nesty, medium, fat, extra wide, chopped from roll, pulled, slapped, extruded, cut from steam form, dried on bamboo woven mat, dehydrated milk, carnation milk powder, buttered, on and on.

Love all your videos Joe. Lime/lemon in Vietnamese is “chanh” The herbs is “Ngò Ôm” or rice paddy herb. More often used in sweet n sour fish soup dish.

I appreciate your Phở review, from the point of view of a Caucasian as your palate and culture are quite different from ours. As many have pointed it out already, the herb you were wondering about is called “Ngò Ôm” or "rice paddy herb" ̣ Its latin name is Limnophila aromatica. But this is the first time I see it served with Phở. Strange. I am Vietnamese American, living in Houston, Texas. We have a lot of great Phở places here as well as all over the US. But even when I were in Vietnam, I had never seen "Ngò Ôm” served with Phở. It mainly goes with our "canh chua cá", ̣litterally "fish sour soup", that we serve with steamed white rice.

Actually I think the bitterness was really good with the Pho which was nice. A great counterpoint to the richness. If you can find it, you should try it and let me know what you think.

If you find yourself in Hong Kong one day, they have a Vietnamese resto there called Pho Kieu. Can't vouch for the quality but clever catchy name!

phở recipe is more on the chinese's side cuz the broth base uses five star anise & the beef dips in hoisin sauce (phở is 粉 or fun fresh broad rice noodle in english)...in NYChinatown we have quite a few chinese beef fun noodle joints from far away one can smell the beef stocks & they eat that as breakfast cuz easy to swallow & warm your stomach in the cold morning...)

Those bread looks incredible, Joe. I don't eat bread often, but I will make an exception and start with the sourdough, and end with the baguette😋. I had a bowl of Pho at my niece and her Vietnamese-American husband's house yesterday. It was delicious!!! It's nice to know where our food came from, but as long as it's delicious, is all that matters in the end, right? I have a funny story about chopsticks. A country bumpkin came to BKK and ordered a bowl of noodles. The vendors asked if he wanted the PISADE (special) bowl of needles, he told her "yes." Now seeing he's from the countryside, the vendor wasn't sure if he could use the chopsticks, so she asked " Ow tah gieb, mai?". He had no idea what tah gieb were, so to save face, he answered, " If it's delicious go on and put in the bowl." 🤣🤣🤣🤣

When I eat Phở, I often put sweet basil, cilantro, chopped green onions and sawtooth coriander leaves in my bowl. However, other people in my family also enjoy eating rice paddy herb together with their Phở too. The herb that you held in your hand but didn't know its name is called Rice Paddy herb.

I live in Orange County, CA and I think the Pho in that area is better then the Pho in Saigon. There's a place in OC that is called Pho 79 and it's won awards.

Now that I believe the bread is really good there. However I can’t imagine how the red bean and cheese taste together 😂... salty or dessert? You should have also tried the scone and let me know if it’s real British hahaha. Pho is my favourite Vietnamese dish but I think it tastes stronger in Thailand.

Haha finally I have you convinced. It’s not cheese though, it’s thick , cold butter! Rich and creamy, absolutely delicious. The red bean is more savoury rather than sweet so it’s perfect. Maybe you need to try a good pho in Vietnam. You should book a trip, I think you’ll really like it in Vietnam

I was in Hanoi once and I was very surprised not to find many pho places there. I asked a waiter once what Vietnamese specialty I should order. He said ginger chicken, which to me was Chinese. I shouldn't have been surprised there was such culinary diversity in a country that spans 1,000 miles!

Yeah that is surprising, many of the pho places in Saigon are northern style. I prefer northern style because Saigon style is too sweet for me

What? Hanoi is home of Pho (both Beef pho and Chicken pho). Pho is originated from Hanoi. There are tons of tradional long-standing pho eateries in Hanoi, especially in Hanoi old quarter. Vietnamese ppl in general and Hanoians in particular enjoy pho everyday, mornings, noons, afternoons, nights. Pho is present everywhere from luxury high-end restaurants to casual restaurants, on streets and small alleys.

It's rice paddy leaves with the basil The rice paddy leaves has a similar fragrance of cumin. You eat the entue stem with the little leaves..don't plug the leaves

Pho did not derive from Chinese beef soup. Back in the 1900’s, Chinese were much poorer than Vietnamese, and back then beef steak and beef soup were dishes that many affluent Vietnamese were accustomed to.

The origin of pho is very debatable. There are some that say it originated from the French. But it's still a fact it started out in Northern Vietnam.

Foreigners from colonial time consumed the parts without bones… Vietnamese cooks then made used of the bones using the warm chinese herbs and spices to neutralized the beefy scents they were not quite used to at that time… hence a new decadents of a broth was born.

I think you can get excellent bread in Asia, they just have to be trained by the French or Germans. Asians are so technically proficient at cooking that they can recreate anything perfectly as long as they understand the process and techniques.

Most of the bread I found was too sweet for me. I think you can get good bread, like in this bakery, but it is difficult to find. Japan and Vietnam definitely have good stuff.

OK, on to the pho. Not bad, but I would have asked only for the raw sliced beef, and also have put just about all the sauces and condiments on the table into my pho. Again, that's just me. I'm glad to see you caught that faux (pho) pas with the squeezed lime.....a real no no anywhere in SE Asia. Glad you went outside to shoot, but I was reminded of the Noel Coward iconic ditty, Mad Dogs and Englishmen Go Out in the Noonday Sun. Keep on at it, Joe, you're doin' some great videos, so I apologize if I sound negative, and all I can say is Keep on it, Mate. Thanks for this one from Saigon/Ho Chi Min City. Oh, and yes, considering that this is northern style, and that the northern regions of what we now call Viet Nam were primarily influenced by Chinese folks and a Confucian social and cultural pattern, I would say that that was far more influential than the French colonialists. I think I'd go for the southern version, anyhow, just being me.

Almost everyone likes Pho in the South, because South vietnam food know how to mix herbs and vegetables to give off the smell of beef. People who like North - Pho often have extremely bad food culture because they can only eat salt and salt

I apologize again for sounding critical, its just that I guess my longing for having choices like that gets to me when I've had a few beers and fewer choices here in the northeast US. Just keep at it and garner those subscribers. I know I'm making a bowl of pho for breakfast/brunch tomorrow. I have enough ingredients to make a passable version.

@@tamtv805 "Almost everyone" is likely those whom tried pho made by all the southern overseas Viets. Westerners whom didn't grow up eating southern style pho and don't like eating a lot of sweet stuff in their savory dishes aren't necessarily fans of the southern style, which is often way too sweet as southerners are heavy-handed with sugar in everything (which is a shame). Those whom like northern style like the hardier beef flavor that comes through and prefer a more savory broth.

i'm sorry if you know this already but to catch lime seeds, squeeze the lime onto your spoon, then press the spoon against the bowl. now tilt your spoon and only the liquid will pass through and you're left with seeds im very sorry for the unclear and dumb instructions😢😢😢 im still learning english

Joe, I didn't get to the pho part of the video, but you're telling me you paid nearly $7 US for a sandwich of bean paste and butter? In Saigon? I wouldn't pay that in NY if somebody were selling it. The bread, I will admit, looks especially delicious, but I've never heard of a banh mi with ingredients that bland. IMHO. On to the pho which I'm anxious to see.

I don’t like tendon, I like brisket and rare beef better. You are right pho without basil, herb, chilly and lemon isn’t the same. Once you eat pho like it, it’s hard to eat pho without these things.

You forget mentioning Saigonese love sugar and they often add much sugar to foods (including pho) and it makes Southern foods be sweeter than Northern foods. So, Southern foods are sweeter. Southern pho (Saigon pho) has a sweeter, richer broth while the broth of Northern style pho (Hanoi pho) is well balance, clear, light, delicate and still retain the gentle beef taste.

I've seen other tourists visit French style bakeries in Hanoi and such and the baked items look delicious...including the desserts. You should try those out to see how they compare, especially if you're having a hankering for bread and baked goods. Ignore that dude that thinks only southern Viet food is the end all and be all of food. Central Vietnam is where a lot of good food comes from, but southern overseas Viets will claim the Central region as "southern" only when it's convenient...but I doubt they'll claim Ho Chi Minh as southern even though he was born and raised in Hue. You can spot these bitter overseas Viets right away as they tend to spout vitriol at anything north.

You are foreigners, so you do not have high requirements when eating Pho. As for the Vietnamese, the requirements are quite high, the shops you have eaten at, for most Vietnamese people, it is normal. You should ask a gourmet local to take you out to eat.

I think the story about pho being French origin needs to die. There's nothing French tasting or looking about pho. The French don't even really do noodles, unlike the Italians...neither of which do it in a bowl of soup. If beef wasn't widely eaten prior to the French, then the French introducing beef doesn't make it any more French as the French didn't invent beef. I mean, do people talk about Latin America when discussing pasta sauces in Italy (as that's where tomatoes are from)? What about pizza or lasagna? 'nuff said. :)

Well, I may have to respectfully disagree on this one. I think there is a certain link. French didn't introduce eating beef in a way which makes it French. More a cultural change within the country to eat it. But there are many examples all over the world of another culture impacting cuisine and dishes and it not looking like the original. USA encourage and introduced wheat to be used in South Korea and Japan, no you cannot view those cuisines without wheat noodles. Vindaloo is a very Indian dish, but it is an evolution of the Portuguese dish carne vnha d’alhos. Italy is a good example, the cuisine is very tomato based, but these didn't exist before the Latin America was pillaged by the Europeans. When you watch people talk about the history of Italian cuisine properly, it is always mentioned. Like I said, I think it was probably a combo of the French and Chinese influence.

Korea and Japan...wheat was used way before the US became a country (US being one of the newest countries/culture out there). So how far back do we go to thank those whom domesticate wheat or ground it up into flour? Or does credit go to those whom invented noodles (Chinese)? It's a rabbit hole, indeed. I don't have problems with people saying it's mostly derived from China as we all know China is next door and many of them came down into Vietnam...and we all know they eat noodles and a soup base. Not sure when they started eating beef, though. But the problem I have is how much credit is given to the French for something that doesn't remotely resemble anything from French cuisine. Banh mi, sure, even though the Viet baguette is different than the French version (I recall a video where a French guy said they just spread pate on their baguette, unlike Viets whom load it up with all kinds of stuff...although you should go to Hai Phong where they make small baguettes with pate that everyone said is super addictive).

No one is saying the French invented Pho, it is about influence and inspiration. You are looking for direct comparison, that is not the point here. @@hungrytoexplore But flavor profile isn't French...the spices used are uniquely Asian. Ginger, star anise, cinnamon, etc. Those are Asian spices and Asian flavor profiles. Charring of ginger and onion is likely Viet as I don't know any other cultures that char before adding to the broth like that. Western herbs are more along the lines of oregano, thyme, parsley, etc...which are never used in Viet dishes of any kind. I don't recall the exact video, but I think the same French guy who mentioned how different the banh mi (sandwich) is to the French baguette with pate also commented on the pho (I might be imagining it at this point, but I think he did also comment on the pho). I think it's really reaching to emphasize the French "influence" with pho...if anything, the spotlight should be more on the Chinese (if one wants to give credit to a culture). If you said coffee or banh mi, I'm okay with French being given credit. Just not pho. But we can agree to disagree.
