Hey guys! Summer is already upon us, and hence we have started some Summer Special videos to get your taste buds tickling - tropical style XD
This Coconut Kiwi cake is a refreshing dessert which will surely instill that summer spirit in you :)
It's also easy to make and the tropical fruits will help you beat the heat. You can substitute the kiwi with any fruit which matches the flavour of coconuts.
We have used whipped cream, but you can use any medium of your choice like buttercream since coconuts are versatile and they blend in well.
Ingredients :
Coconut cake sponge :
Butter - 125g
Condensed milk - 205g
Vanilla essence - 1 tsp
Maida - 155g
Baking powder - 1/2 tsp
Baking soda - 1/2 tsp
Milk - 30g
Coconut milk - 75g - 80g
Desiccated coconut - 20g
Bake in a 6" tin at 180 degrees Celsius for 40-45 mins
For topping and decoration:
Freshly chopped kiwis
Whipped cream / buttercream
Cherries
Edible flowers
Mint leaves
NOTE : this cake contains fresh fruits, so immediate consumption is recommended
Yield : Approximate weight of the sponge will be 500g and the frosted cake will be around 1kg.
