Merci pour cette recette, l'aubergine est une légume incontournable dans la cuisine marocainne, zaalouka avec les olives marinées comme repas d'entrée. Elle est une mine des minereaux: potassium, cuivre, magnése et toutes les vitamines, surtout B1, B6 et B9 et riche en fibre

Très originale cette recette et le point fort est que l’aubergine demande toujours un bain d’huile alors que là ce n’est pas gras du tout alors j’adhère ! Un grand MERCI à vous

The old cook of family friend in Southern Spain cooked this slowly - very relaxing/comforting to watch her tend the tortilla, chopping etc! In contrast to my mother who ran a self-employed business catering Cordon Bleu lunches in a 1970s 'boardroom', held in a flat at the Barbican. That's what business men did in those days! I presume they could talk more freely than in a restaurant. I was bored in the spare room of this flat during school holidays, whilst mum provided lunch. Sounds dodgy, but all above board! Alternatively, I was sent on a cheap flight in care of air stewardesses to this friend & her daughter in Spain (with the cook) I first flew alone aged 7. So, watching slow cooking is comforting!

Super recette ! Pour être encore plus légère, cette recette peut être réalisée avec du potiron ou des patates douces à la place des pommes de terre, voire des courgettes. L’ail frais en gousse et l’huile d’olive c’est encore mieux.
