This is probably a stupid question but where is the air you are adding to the milk coming from? The steam wand injects steam which is water vapour. This will condense to water as soon as the temperature is

Its a brilliant question!! I do see beginners struggle with this concept so I usually omit it altogether. But what's happening is the force of the steam is pushing the milk away and leaving an air gap where the milk was. That air gets mixed into the milk and when the whey proteins β-Lactoglobulin starts to denature from heat, the hydrophobic end of the proteins essentially encased the air bubbles in the milk.

I’ve been a barista for 5 years and this was the best tutorial in regards to steaming milk that I’ve ever seen, or trained to do. Explaining in depth the reasoning/science behind it made it so much easier to remember. I hate when people don’t explain the “why” to things and expect me to care more about applying those lessons😅

I learned to foam milk yesterday, I was doing the method everyone told online until I found a comment that said '' dont put the buse IN the milk but rather on the side of it, not too deep '' game changer, oat milk foams so nicely

This deserves a lot more views... The only thing missing is how these mistakes will result in the milk. Usually when a newbie ask why their latte art is bad, the advices are mostly "you steam too long", "you steam too hot" or "get a better machine". Looking at the milk will provide intel that it's caused by wrong pitcher size / milk volume, stretching too long/short, wrong wand positioning etc.

I've watched a lot of milk videos because I still think baristas have a hidden magic wand. But your video makes the most sense and you were showing your hands a lot and I didn't see a wand. I'll keep trying and trying because I love coffee. Thanks....

I'm researching for my ideal home set up after not working in coffee for a while...but I did for 9-10 years of my life (started almost 20 years ago) and I was watching this video to see if I could test myself on what mistakes you'd mention and HOW they affect the milk....and I passed my own test. 🤣 I miss working in coffee so much and I'm so glad I had such great training and exposure as a young barista! So cool to see all the content on KZfaq these days about it.

I just watched Hoffman on the subject, and the part I was leaving out was the short rest coming off the wand, before swirling. Presto!! My art improved by 100%

Sure! That’s helpful way to get a foam that’s dense and workable. The reason I try not to recommend it universally is because mooooost people over aerate their milk so letting it sit is often the opposite of what is needed. Granted both methods are great! I personally never let my milk sit but it doesn’t hurt the art so long as you swirl it again before pouring.

That could be the best clearest explanation of steaming ever. It seems I am doing it correct, texture is good taste is good but I am having trouble in bringing it exactly to latte art level.. I can do a mediocre heart but the milk texture does not become good enough for anything more complex. I think it could be bacause my machine’s general steam pressure is not that high (gaggia classic pro). Sonetimes you get a good vortex sometimes you dont. But I like it, a small cute machine.

I'd say it doesn't sound hollow, because we associate resonance with hollow and there wasn't any resonance. Dense would be a better word to replace 'hollow' with. Great video, thanks 😊

i was making only two of these mistakes. i'm a new barrista but those two mistakes stopped the milk getting creamy. they were the position of the jug mistake and i wasn't swirling the jug although i always tapped it. i just tried it with those mistakes fixed and the milk came out beautiful and creamy. Thank you. my latte art still sucks but my next goal is fixing that..

Additional point to add to this wonderful fun short lecture. Warming up the milk gives it light natural sweetness. The top sweetness level: 135 - 150F (57 - 66C). Thank you for the valuable knowledge, Emilee!!!

Your tips really helped me. I always had too much air. So the lifting jug to stop injecting air helped. Now the patterns are more defined

I'm doing a specific style of latte art (ignore the videos on my channel, those suck) with slightly thinner milk, and when I finish steaming, it looks a certain way. Any more air and when I groom, the milk visibly goes from foamy (even if slightly) to liquid. Any less air and the texture is not satisfying, and the pour is less controllable. And that gentle aeration tip, damn. I realized that a few weeks ago and it really upgraded my texture. I'm glad I got some confirmation on this!!! I have a few questions, though my milk steaming is decent and improving, I struggle more pouring into espresso than into thick hot cocoa. This becomes much worse when I thoroughly mix my espresso before pouring. I asked my latte art teacher, and he says the coffee "eats" the milk foam. I'm not quite sure exactly how to fix this; this issue has been plaguing me all month (been doing a lot of darker roast espresso, maybe it is related?). I'm wondering if there's anything I can do to change my espresso for improving my latte art.
