My bane has been thin milk and TIL that perhaps expanding with more air wasn't actually helping as you suggest that aggressive aeration could cause issues. Would have loved to see an example of what that looks like, because I've been truly stumped with inconsistent results whenever my milk is thin. Granted I suspect milk age and how much fat content is present (I vigorously shake my milk, I swear!) tends to be my biggest enemy each time.

No disrespect to others uploading how to do latte arts (wanting to share their knowledge with others) but Emilee is by far - hands down - one of the best "teachers" on how to do latte arts. She takes the time to explain the concepts, techniques and visually show in detail what is needed to be accomplished to be a success. Thank you so much for sharing.

In my opinion baristas had to adapt during covid. I love hearing that a drink is for here when it comes to latte art. Unfortunately for about a year we had to do to go cups only at a coffee shop I manage. I think the trick is to lean the cup down almost sideways and slowly pull it upward as you pour high and quick to get to the top. If you go to slow you can get bubbles and or separation. To go cups I have to pause before I start and focus. You can't hesitate or pause with it.

The UK café company I work for hold a national "Barista of the Year" annual competition. This includes latte art as part of the testing. However, for two years now, they've changed the cup shape from a lovely bowl shape to a cylindrical mug shape which has made it very difficult to produce clean, high contrast latte art designs. Not only that, but they've changed many stores from traditional coffee machines to WMF automatic bean-to-cup machines - taking away then fun of making coffee for us baristas. Sad times. Although on a lighter note - they recently sent me to the London Coffee Festival for two days - Disneyland for baristas!

Great content! Thanks for sharing. I noticed you have a Rancilio Sylvia machine. Being a single boiler machine, what steps do you take to make an extra delicious latte? I do the following: 1. Fill my ports filter with coffee and set aside. 2. Bring the steam temperature up, and then steam milk. 3. Run an empty brew cycle until brew temperature is in the right range. 4. Insert ports filter and get a shot of espresso. 5. Complete an amateur latte art pour with semi successful results. I should mention that I also have a PID installed on my machine, so I can see temperatures real time. Thoughts?

I'm pretty sure you want to make the espresso first and then steam your milk. As Emilee states in many videos, you don't want to let your milk sit too long before pouring. I suspect your foam is separating out from your milk while you're waiting for your espresso to finish.
