Try hard boiling the preserved eggs and comparing them to the super fresh ones. Not for taste, but for ease of peeling. I've been told that the REAL reason some eggs are difficult to peel and others are super easy is actually the AGE of the egg. The fresher the egg, the harder it is to peel without mangling the white. Personally, I have reason to believe that it's true. You should test it!

I have actually found a good technique that is FOOL PROOF I do the hard boil as per usual Drain the hot water, some people would place them in ice water, I have found not a good idea Just straight cold tap water, let the eggs chill for about 5 minutes Drain the water repeat that step again chill 5 more minutes blah blah THEN after that second chill out, I CRACK the eggs get that thin membrane between the whites and the shell broken in a few places Let them chill in cold water for 5 more minutes Rinse the water do it again if necessary Then while still in the water begin to peel The shells peel right off and you have beautiful eggs Works no matter how fresh they are

I agree! When our eggs have been sitting too long, we boil them so they don’t spoil. The older eggs can be peeled hot without issue.

I feel like the age thing is hit or miss, I had both fresh eggs that peel easily and didn't peel. But same goes for old eggs. If I want boiled eggs, I don't feel like waiting around a month for them to be peelable.

The other egg preservation is called 'Egg Glassing' and this is something that you can only do with farm fresh eggs that have not been washed. This is due to the enzyme barrier that coats the outside of the egg after the chicken has layed the egg. Please don't attempt egg glassing or any egg preservation with grocery store eggs! The lyme will leech through the shell. Egg-cellet! 🍳

@@TheAnon26 in the us the only place youll find those are at a local farm . Meaning if youre from a big city, the local farm usually has to obide by cleaning standards even though their produce is farm fresh. Especially if they take food benefits coupons from the govt. Just something to remember.

Do not use this storage method for store bought eggs. It is for unwashed eggs...home laid or bought from source unwashed. There is a natural coating from the laying process that is washed off as part of commercial sale prep. Washed egg pores are open to absorb lime or other things you don't want. Thanks for doing this. It is fun to watch. 🙂

Worth noting that’s really only for eggs in the United States (& prolly Canada). In most other countries (UK, for example), all eggs are natural / unwashed and not refrigerated in the store; and it’s illegal for them to be washed / sold like in the US.

I live here too and don’t know where that is unless we are talking goodwill. I love your videos Emmy and I just bought eggs to begin this. When I bought copious amounts of lime six months ago, I didn’t know what I would do with it, but today I will use my gallon jars. And that technique of pouring the oil onto the egg I also saw by a woman I knew from Mexico. :) I love old world traditions.

This raises a question in my mind: Do those of you who keep chickens notice any difference between, say, springtime eggs and autumn eggs, or any other seasonal difference? My guess is that they're pretty consistent, but I don't know; maybe they find different kinds of things to nibble on at different times of the year, and maybe that makes some difference. No?

Yes, depending on what the chickens are eating and how much time they are getting outside, the yolks will be more golden. Typically Spring is the best time to start preserving eggs for the low months in winter. Fewer eggs are laid in winter because of the same variables that affect the yolks.

My chickens eggs in Summertime are less golden and orange yolked than in other seasons because we keep them in their run and don't let them free range while we have a garden up. (They destroy the garden.) When left to forage and feed on chicken feed only as a supplement, their eggs are super lovely :)

How about with regard to the way it tastes? Would a hen that's eaten rosemary produce eggs that are perfumed with rosemary?

@@williamkwan6913 I honestly can't tell a difference when my chickens eat different foods. That said, you'd have a hard time making a chicken eat strong herbs when there is anything else around. :)

I honestly prefer these types of waffle makers. My grandma used to have a similar one and I liked all the smaller divots instead of the gigantic ones that are all now Belgian waffles.

I do the same thing with freezing the waffles, and I also freeze pancakes and french toast. I love that it makes it so my kids can have a hot breakfast without me having to actually COOK a hot breakfast each morning!

I remember watching Emmy preserve these eggs on the way to start work in a new job this time last year. Now I’m watching it a year later, unemployed and in lockdown in Ireland. Time really goes quick and fast don’t it!

My Haus order arrived the day before yesterday and I really love them both. I wasn't a fan of either just straight or on the rocks (not bad, just too strong), but I was out of club soda and tonic. I tried them with some vanilla cream soda...OMG, DELICIOUS.

Never been to Burma, and I've been spooning hot oil over my eggs for years. 🤷🏻‍♀️ And my eggs frequently spread like that without being a year old. Maybe more to do with the temperature of the egg than the age...

I rarely eat eggs but the local farm market will be returning to my area Saturday. I may try to get a half-dozen or so. Love your videos dear Emmy! I have a very old waffle iron that belonged to my grandmum, probably from Belgium 1930's or so. It still works and like yours the plates are removable for cleaning.

The preserved eggs remind me of using powdered eggs, and powdered milk at times during my childhood, to stretch the budget. My mom tried, but they always tasted powdered. Have you heard of any recipes that they actually taste good in, besides premade cake mix that require only water and oil?

Homemade hot cocoa mix uses powdered milk and it's wonderful! If you google it, look for a recipe that has cook-and-serve pudding mix in it.

Powdered eggs don’t even smell good. I too would like to know how to use them besides cake mix, but I think baking is the ONLY way to use a powdered egg.

The spreading of the egg happens to old eggs, not only 1 year old eggs ;) And, like you said and rightly, as old eggs spread more they become thinner and so they cook faster. They are usually perfectly fine to eat but if you cook them along with a fresh egg you need to pay attention because the old egg will cook faster.
