These look delightful! Emmy's commitment and unbiased attitudes towards her recipe demos are such a treasure. It shows in every video! SO - I just wanted to note for those curious/ those who are planning on trying this recipe but are apprehensive about the [bean] filling in any way - Emmy is right. It's all about the bean here and if you don't like beans at all, this may not be the bun filling for you. BUT! There's a couple things you can do before going all out for a recipe of which you're unsure. Firstly - as far as I know - there are actually 3 types of bean fillings, red bean (as seen here) and black bean paste. Additionally, there is red bean paste that is textured, as well as super smooth red bean paste; I'm not at all a fan of the chunky version. Personally, black bean is my absolute favorite sweet filling, and I can tolerate a smooth red bean paste one. Additionally, many oriental grocery stores have frozen buns in all varieties, including all the bean pastes I've mentioned. They usually come in a pack of 6 or so, and I recommend picking some up before tackling this or any steam bun recipe to get an idea of what you're getting into. It's a great way to audition different fillings as well. The Thai version are called salapao (ซาลาเปา) and we have some slightly different fillings as well, including sangkaya (สังขยา) a delicious coconut custard flavoured with green pandan leaf (ใบเตย) (flavour similar to a jacked up, highly fragrant /fruitier vanilla?). You can also purchase a kind of instant sangkaya/สังขยา powder, similar to instant pudding powders that must be cooked. I've added the Thai translations in case the packages are not labeled well or in English. So if you've had textured red bean paste but aren't a fan, do try the smooth version, or the black bean version. It doesn't seem like it'd make a big diff, but the texture change of smooth bean paste combined with fluffy steamy bun I think is just perfecto. Or give sangkaya custard a try! And of course, you can always pick up some frozen buns for a low commitment trial! If you're lucky, some stores steam / bake their own buns. Some reheat the frozen ones so you can buy just one or two as well. Good luck!
