Do you prefer a baked or fried empanada?

Preheat oven to 425 degrees (f)
-Recipe yields 12 to 14 empanadas
-this recipe can be easily doubled and frozen for later use 🥳
-I used a 5-inch cookie-cutter ring
Empanada dough ingredients
4 cups AP flour
1 cup cold water (if arid climate use 1 1/4 cups cold water
1/2 cup shortening (cold)
1 stick salted butter (cold)
1 tsp salt
1/4 tsp sugar
Ground beef/ picadillo filling ingredients
1.5 pounds groundbeef
2 medium potatoes (soak in 1 1/2 cups of water)
1/2 onion
2 green onions
1 tsp salt
1 tsp black pepper
Small bunch of cilantro
* If you want more to your filling add 1 cup of corn and season with an additional 1/2 tsp paprika and 1 tsp ground cumin
Coating- 1 egg + 1/2 Tbsp water add mix
Bake temps
1st bake at 425 degrees (f) for 10 minutes
2nd bake at 350 degrees (f) for 30 to 35 minutes
