This time Chef Fujita from Dim Sum Factory Ku-Ron in Osaka showed us how to make curry soup dumplings.
- Ingredients
[Filling]

350g chicken broth
18g powdered gelatin
90g water (for softening gelatin)
1/3 tsp salt
2 tbsp salad oil
2 grains cardamom
2 bay leaves
3g cinnamon
2g Sichuan pepper
- Curry seasoning (Use half of the amount from the one made from the following ingredients)
3 tbsp salad oil
2.5g minced cumin
6g minced ginger
200g onion
A pinch of salt
2.5g coriander
2.5g cumin
1g turmeric
1.5g chili pepper
25g doubanjiang (Chili bean paste)
100g chopped tomatoes
50g ketchup
30g dried shrimp
200g ground pork
50g coconut milk
- Base of the filling
200g ground pork
1g salt
A little pepper
[Dough]
50g flour
0.5g turmeric
0.5g cumin
30g hot water
50g flour
150g string flour
A pinch of salt
5g sugar
90 to 100g water
10g lard
