Wonderful interview with a lady who is beautiful on so many levels - vegan ethics being very high on the list! I look forward to buying her books. I, too, love cooking plant-based in my Instant Pot. One thing I do in my Instant Pot is layering: I bought a few round stainless steel racks that were originally designed to boil eggs, but I'd never use them for that purpose. Instead, I will place some dry beans and water in the bottom of the Instant Pot, then put a rack on top of that, and on the rack set a stainless steel bowl of some type of grains and water in it. Then to the sides of the bowl, up on the rack, add some slices of sweet potato or winter squash. I choose items that require similar cooking times. For example, the beans could be black lentils with the grain called einkorn (which is not corn at all, but a variety of heirloom/ancient whole wheat), and then the sweet potatoes. Stack it, set it, forget it. Go for a hike. Literally. Come back refreshed from walking, and then separately on the regular stove, I sauté or steam up some quick asparagus or broccoli with mushrooms and garlic, and I end up with a VERY easy to prepare meal, all fresh ingredients, that covers the four groups I usually aim to include in every dish - some kind of bean or lentil, some kind of whole grain, some kind of green veggie, some kind of yellow/orange/red veggie. I eat a few whole fresh Medjool dates or a bowl of fresh cut fruit for dessert and wow, what a healthy, easy to make, and extremely delicious feast! :>)

Great interview! I have followed Nisha for a few years and have learned a lot from her. I borrowed her Instant Pot cookbook from the library about two years ago and liked it so much that I bought it. I enjoyed hearing her tell her back story and conversing with Rip.

Nisha is gorgeous and sweet. (Obviously very smart too.) Her book sounds wonderful! Applaud her parents for being ok with her walking away from a Harvard Law degree to be happy. I read your brother did that from Yale Med Rip, and as you said also supported what you wanted to do - a bow to your folks too.

Finally!!! I've been a fan of Nisha for several years - she got me to cooking with whole spices in my Indian dishes (thank you!!). Her Thanksgiving stuffing is such a hit that my brother simply said, "let's make that a staple every year". BTW, I usually take out the oil or coconut milk, half the cashews or substitute white beans. I totally make her recipes "plantstrong" and they are STILL AMAZINGLY DELICIOUS!!!! Let's see her at Plantstock next year!!!!!

NIsha is great! I've tried several of her recipes, her red lentil curry is my favorite and most often made dish. I'll sometime make a double or triple batch and take to a weekly potluck at church.

I love her Shepherd's Pie! (I have started to add 2 cups of cooked lentils. I've also made it with white sweet potatoes.) I make it frequently. As a matter of fact, my 24-year-old daughter just asked me to make one for her to put in her freezer. So last week I made one for her to take home and one for her to eat with us that night. Yummy!

Good topic. But the interviewer needs to learn to be a good listener instead of interrupting the guest speaker mid-sentence. I noticed this is repeated behavior in all his podcasts that I have watched. That's why I don't watch his podcasts often. Sorry to be so blunt. Hope the interview process can be improved.

After I learned about Nisha Vora through this interview I looked to her cooking here on KZfaq. WARNING she is using a lot of SALT and OIL, DANGEROUS!!! For people, like me, that believes in Dr Esselstyn's Diet recommendations, Nisha Vora's cooking is not for You 😕

I use a lot of Nisha's recipes, but modify them like I do with most recipes, just leave out the oil or use some substitute for it, and leave out or reduce the salt when cooking it. They still are full of flavor without the oil and salt.

Don't be silly😂 she's not using a lot of salt, she's just using salt. If you don't like it, simply don't add it to your dish, duh!🤦🏻‍♀️ Same with the oil too. She's not forcing you to cook your food in oil 🤦🏻‍♀️ If you follow Dr's Esselstyn's diet recommendations, then you know how to cook without salt and oil, so there's no need for your type of comment here, is there?🤦🏻‍♀️

@@laurag.p. I think it's fair to highlight that Nisha do not cook in a way that the Esselstyn family recommend. This is an interview done by Rip Esselstyn and people can come to the conclusion that Rip and the rest of the Esselstyn family are ok with salt and oil. Like you write I know how to avoid but I really want more people to know the danger of salt and oil.

@@mike.999.s yes, it's fair to highlight it, but if people watch the video, they'll know this anyway. Also, you didn't just highlight it, you wrote like it's a huge issue that she uses these 2 ingredients. It's not. Anyone can omit them from her recipes if so they wish, it's not the end of the world if she and others choose to use salt and oil. Which, by the way, are not dangerous when used in moderation. Your body needs some salt and some type of foods have to have a bit of fat/oil in order to be processed by your body. So, highlighting that she uses these is ok, but don't make it sound like it's the end of the world, cos it's not.

I have to say....what a strange choice to talk about a book Nisha wrote 4 years ago as if it was a new release. The conversation could have been so much better if you focused on her incredible youtube channel and all the recipes she posts there. You could even tell she was like...well I wrote that book 4 years ago so... She barely even uses an InstantPot on her channel. Missed opportunity here, Rip.

I am confused why Rip and Nisha aren't discussing the use of oils, salt and coconut milk, which she uses so plentifully in her recipes. I bought her Instant Pot book and have found the recipes to be unnecessarily fussy and in using the Instant Pot, inept. (Quick pressure relief, no matter how long I waited, it shot up a huge fume of mess, not only once, but many times.) Without authentic Indian spices, the recipes are bland and simply not worth the time to create. Most of all, I wish you would address the unhealthy inclusions of high salt and coconut oil and milk/cream in these recipes. I'm so sad to have been bilked into buying a recipe book that is overly complicated and unhealthful. What a disappointment!
