My mom was wide-eyed when she saw these and said they look exactly like the ensaimada she grew up with -- and not the pillowy soft cheese kind that's popular today. If you don't mind me asking, where is your version of ensaimada from in the Philippines?

awe! this is making me so happy! i grew up somewhere in Dipolog- in Western Mindanao. When i think of ensaymada, i think about this one and not the pillow one with cheese as well!
