Auntie Bee Leng. Can teach how you make the green chilli for the hor fun?

1 handful green chili 1 cup rice vinegar 1 tsp Salt 2 tsp Sugar Wash then chop green chili roughly. Salt 1 tsp. Blanch under boiling water. Dry thoroughly. Add to bottle, 1 tsp salt and sugar. Add vinegar.

@@TheBurningKitchen Hello - Yes I like cooking it this way - I have tried many others but this just added an edge I have been missing - Thank you very much! I am now experimenting with different meat's/ flavours/ veg just to change it up a bit. Also IF, (that's a big if) there are left over, I use as a base for making congee and just build on the flavours. Inspired :)

Hi auntie... I am trying to cook this dish this weekend. Thanks for your video. Can I ask the different between black vinegar and black sweet vinegar? I am confuse, which should I be using? Any brand to recommend?

Black vinegar is sour n used to eat with meepok dry. Sweet black vinegar is the one used to make pig’s trotter vinegar for confinement ladies. To fry hor fun use the black vinegar. Don’t forget to post yr Wat Tan Hor Fun her, ok? Enjoy cooking!! Any brand will do.

Julie Cheong,I am not sure whether it’s a standard practice becos most of the stalls or even Restuarant will not share their secrets. I learnt from someone that this is the secret of giving the hor fun a nice burnt ‘wok hei’ flavour. I tried n found it’s true. When I visited my Thai friend in Germany, she also used black vinegar when frying the dried beef hor fun. It was Super yummy.
