In episode #28 ‎Nonna Paolone is teaching us how to make Homemade Jarred Italian Tomato Sauce. This style of Italian Tomato sauce is called Bagno Maria. September is the month when the Italians from all over the world make their 1 year supply of Homemade Tomato Sauce. Every Italian has their own way of making it and this is Nonna's way. Italians like to make their own pasta sauce because the ones you buy at the store are not organic, contain lots of acid and preservatives. Doing it this way, the Italians control what's in the sauce, how it's made, where the tomatoes come from, plus it tastes a lot better when you make it yourself. Watch to get the step by step instructions ... One important ingredient that Nonna always adds to her recipe is cooking with her heart. So, be sure when you make this you do it with all your heart. - Gas Burners (nonna has 4 burners)

When you're Italian you can never have enough pomodoro. Im only half Italian and I usually grow enough San Marzono tomatoes to can 40 Jars and its never enough for the whole year. Love the video, can't believe i just found it.

Shannon, how many san marzano tomatoes do you plant to get enough for 40 jars? I've grown tomatoes for fresh eating for years, but I canned tomatoes for the first time this week, and I was surprised how quickly the tomatoes were used up. Thanks for your help.

Everything is great. Except, never tighten the bands more than finger tight, you can get an uneven seal. Just finger tight is sufficient. Love the family effort.

Also recommend the content of the jar be heated. You want the air to escape and when it cools down create a vacuum. Also close it semi tight. If you follow all of these. Your jars won’t pop.

Actually they are wrong about tightening the jars. They explode when they are too TIGHT because they cannot release air. They should only be tightened finger tight.

Not sure about that one ..we used recycled beer bottles in Sicily and a special tool and caps that where sealed tight before heating them ....I grew up making sauce sun dried tomatoes tomato paste ...ton of work

@@rosebilletta3846 Hello Rose When I was a kid I made tomatoes with my dad He would cut, quarter and salt the tomatoes then put them thru the machine. He then built a fire and put them in the water bath. He used wine bottles with the bottle capper ! I will be using 32 oz jars. Not sure how long to boil them for. Everyone seems to cook the tomatoes first, Can you please help? Thanks

I just had to put my angel pug down I carried her for two years; she was 16 years old could not get up any more. Lots of work making that tomato sauce brings me back 70 years what fun the old man hitting everyone for not helping. I was the youngest, so I was saved by Ma and Nona, and Nona and Nick lived up to the name 11 kids 42 grandchildren...

So many folks that teach how to can, tell their students that the jars and seals must be sterilized. Simply not true and unnecessary work. So if the jars do get sterilized and then the sit in the open air in an unsterile environment (which we see in this video), they are no longer sterile. The jars do need to be clean and held in hot water if they are being filled with boiling product so they don’t crack. But everything, in this case jars, tomato sauce and seals are sterilized when processing in the water bath canner.

I thought canning in a water bath canner or pressure cooker the rings should be 'finger tip' tight so they DON'T explode, then tighten when they come out?

I can’t imagine going through and trimming and washing that many tomatoes. I would think it would take an army to do all of that work. The mother has some arthritis, I can tell by the way she is walking and she is only wearing those flip flops, no support for her body and she is working so hard. I don’t think the modern women of today would work that hard.

You shouldn't tighten the jars this much. When you process the filled jars the air is pushed out of the jars creating a vacuum. They exploded because the air couldn't escape.

You cannot fully tighten the jars. It says it right on the Ball canning instructions.

The jars broke because the lids were tightened too much. Tighten only finger tight. .

OMG the moment when she broke out the mother of all wooden spoons! There are like... i dunno baseball.. bats made with less wood. That thing takes no prisoners. No tomato will be spared and if you get out of line , gluck with that cause you too might suffer a similar fate.

Nonna uses regular salt. Yes, you can put the jars anywhere after you boil them. Nonna keeps her jars in the garage.

This is done the hard way, long way. Freeze the tomatoes, skin comes right off when thawed. Use an emersion blender instead of the grinder. Put in Nesco roaster until your desired consistency. Blend with emmersion blender.

The lids are too tight!! They have buckled and jars have exploded. The jars from years before in the cupboard have buckled lids also. Firm but finger tight only! It's sad this family have been doing it wrong for so long 😥

You’re suppose to boil the lids. Not take them out straight. Also. The jars should be heated before using. Then boiled right after filling and lid. That’s why they explode.
