Grew up eating escarole and beans. I make it at home still. I make it simple with just escarole, beans, garlic, chicken broth and water mix, salt, pepper, and a dash of nutmeg (takes any bitterness out). I also smash up some of the beans to thicken the liquid. Need to try yours now. Thank you, Sir. Have a nice day.

My Nan made them differently, but I would love to try this recipe. My escarole was eaten to the ground by deer and ground hogs! Will have to try and regrow it next year with a better fence. I let a few plants bolt and the deer and ground hogs even eat the flowers! So annoying.

Okayyyyy so!,,, im not able to consume ANY type of red meat,,,, ( nottt by choice!🤦♀️),,,, it’s due to physiological issues,,,, non the less,,, WOULD YOU OR COULD YOU SUGGEST what I could substitute for that sausage?,,,, I am able to consume chicken and or fish,,,,

I can’t eat red meat either and I think this would be perfect with chicken or fish, but I would probably use chicken.

Just make it vegetarian…. I don’t add meat and it tastes amazing , sometimes I add 1 cup small pasta shells.

I have just try escarole for the first time. I find them to be tough for lettuce 🥬 is it me 🤔
