Welcome to my place for a coffee. Now, this Ethiopian coffee ceremony happens in the house at least 3 times a week if not every day.
There is a lot going on when drinking Ethiopian coffee and it is for sure not a quick coffee in a filter pot.
It is a long process and a fantastic social time for friends and family to sit and chat, I feel very lucky to have this ceremony as part of my life and I encourage you all to try it at least once.
We start by washing the coffee beans several times and then roast them in a pan over charcoal, you can do this on a stovetop as well.
The coffee is then ground into a powder but not before to smoking pan of beans is walked around the house filling each room with the wonderful coffee aromas.
These pots are known as Jabena, they come in all sorts of sizes and shapes, we will be using the white one today.
The small no-handle cups are called Cine, snacks such as popcorn, Dabo Kolo, sweets, and fresh fruits are also served with the coffee.
Here you can see the beans in raw, roasted, and ground form.
Plenty of incense is burnt throughout the ceremony, the name of the table with the cups on is called a REKEBOT and again comes in many sizes and designs.
So the ground coffee is placed inside the Jabena with water and it is boiled on the charcoal beside the server.
Once ready it is poured into the cups usually with sugar and served black.
If you want milk of course it is no problem.
A sprig herb known as TENADAM can also be placed in the cups, I personally love it this way.
In some regions of Ethiopia, butter or honey may be added.
So the coffee is now served and you can have as many cups as you like as you chat amongst your fellow drinkers.
Tradition says you should have 3 cups.

Get down to your local Ethiopian restaurant eat and then ask them for Jabaena coffee or Jabena BUNA.
It really is a wonderful thing to do and of course, tastes amazing.

Fact: a little bit of salt in coffee was the norm before sugar became widely available...in the 1950s, I believe. Great video!!! Your wife is well versed with her culture.
