You could simplify your final add of sugar by racking the hard cider to another clean container, then add your sugar to this container per total volume of 4.5 gallons. This way each bottle has a consistent mix even with bottles of different sizes. The racking should leave most of the sediment in the carboy. Then bottle from this second contained. (Buckets work) If mixing the sugar makes it cloudy let it sit another day before bottling. Thanks for the recipe. I'm going to give it a try. Was the cinnamon too much, too little, or just right?

I've really gotten into making cider lately and I've watched so many terrible videos on how to do it. Your's was awesome. Thanks so much for taking the time and effort to make a video that is actually helpful and shows the complete process. I have seen so many video of people dumping a packet of yeast into a one gallon plastic jug and then they say "That's it! - hit the subscribe button!" Again, thanks for taking the time to help people out in this hobby!

Rarely comment, but excellent video.Was tasked to "rate" this video through a service and enjoyed it so much I saved it to watch later. It motivated me to brew some cider given its simplicity .have a few gallon batches using your recipe and a few gallons of whole food unfiltered organic going. the whole food is awesome only a gallon but it comes in a 1-gallon carboy which makes things easier, all you need is some sugar and a " bubbler".Again excellent video, I will share it around.

Great video! Three small tips. 1. Buy a small spray bottle( like for cleaning windows or training cats) and fill it with starsan or similar agent 2. If you want to add anything the isn't pasteurized, boil it for 15 min. I often use honey (which is ripe with wild yeast) and always boil it with 2 liters of juice. 3. For easier sugar measuring , put cider in a new marked bucket or other container ( to avoid stirring up yeast and other gunk) and add the amount of sugar needed for that volume and then stir(so if the "clean" cider measures at 19 liters then you add 6grams of sugar X 19 in the bucket and stir well)

Gary Wayne Coleman (February 8, 1968 - May 28, 2010) was an American actor best known for his role as Arnold Jackson in Diff'rent Strokes (1978-1986) and for his small stature as an adult. He was described in the 1980s as "one of television's most promising stars". After a successful childhood acting career, Coleman struggled financially later in life. In 1989, he successfully sued his parents and business adviser over misappropriation of his assets, only to declare bankruptcy a decade later. On May 28, 2010, Coleman died of an epidural hematoma at age 42. - Wiki

four and half gallons juice, 2 1/2 cups of evaporated cane juice. (sugar) ok. I love that you mentioned brix. I've been enjoying discovering the value of the produce that's out there, with the refractometer. I tend to think that the minerals in the good, organic sugar DO have an effect in the final vibration of the result.... I have a lovely glass jug I've been just waiting to use. I always wonder if we really need storebought yeast... I guess I'm a wild yeast romantic. A co-worker used to make amazing hard cider just throwing a few thompson raisons into jugs, and leaving them on the cool porch between thanksgiving and christmastime. This same woman used to make chocolate eggs for Easter with yolks and whites inside. like the old Laura Secord eggs; amazing, and she made it all seem easy. thanks
@EudaemoniusMarkII
@EudaemoniusMarkII 7 жыл бұрын
Yes, you can use wild yeast. The prob is that you never know what you are going to get. What ever is in the wind could mean some nasty stuff or some delightful stuff. Buying the specific yeast just gives a more controlled product with less fail rate.

You mentioned it was a little tart for your taste, here's how you can fix that. On top of the sugar you added to carbonate the bottles, I would add to your carboy either some apple juice or more cider mix. In the bottle, that yeast is gonna want to eat all that sugar (we've just added more) so you need to prevent that and only have the yeast consume enough to carbonate it. After a couple days when the carbonation is where you want it, pasteurize the bottles. This will leave you with the desired carbonation, but will kill the yeast before it gets a chance to consume all of the extra sugar you just added giving you a drink that's a little sweeter to compliment the tartness and bring out a little extra flavor.

What are your thoughts on using honey or brown sugar instead of white sugar? Also, how would you recommend mixing different flavors into the cider? Like a hint of orange zest, or apple pie spices and such? Very interested in your opinion!
@EudaemoniusMarkII
@EudaemoniusMarkII 8 жыл бұрын
When it comes down to it, I think yeast are not picky about where their food comes from. The thing to remember is that other flavors travel in things like honey and brown sugar Those flavors become part of your product. If you like those, I say go for it! You need to check with your hydrometer when you start messing with the sugar content to be sure you are going to get the alcohol level you want. Added ingredients are great. Get your recipe perfected, then tweak as you like for flavor s. Remember that as things basically rot, the flavors can change. Love to hear your results!

Great Video, Loved the time lapse. For my cider, as I like medium sweet you can add a little non fermentable sugar when you put the sugar into your bottles. The process is called back sweetening. One product you can use is Splender. Cheers from New Zealand, Keep up the good work.

That's a nice recipe 👍. I have made tons of cider and I have experimented with many different ratios of ingredients and flavorings. If you like to be experimental with your recipes here is a few additions that makes for really good cider. I almost always use 1 or two cans of various frozen juice concentrate instead of granulated sugar, frozen fruit punch seems to add the best flavor (cider needs Acidity) for balance. Sometimes I use about a half cup of whole mulling spice instead of just cinnamon if I am going spiced. I learned adding more acidity is key because apples lack much acid, so adding 1 lb of whole blueberries to 5 gal. Is phenomenal It gives it a very nice acidity that rounds the flavor profile and it gives it a bonus nice color. I also find that racking it off the lees at around 8 to 10 days also brightens and cleans the flavor up quite a bit. My brewing priming and bottling method typically goes: Batch start SG around 1.050 About 1 week to 10 days in with SG at about 1.018 I rack it through a 300 mesh screen into a bottling bucket. I mix a quart of fresh cider back in and that takes it back up to around or just under 1.020 then I bottle it. And i fill a plastic water bottle also for a pressure moniter. In about 1 week (it depends on temp) or when the spring water bottle is scary tight like it's gonna blow any minute, I crack a bottle and pour it into a glass, check the carb level, flavor profile, SG etc. These tastings can sometimes go on for another week or two and when I get the exact sweetness dryness balance i am looking for or prefer. I then put all the bottles in a large kettle and bring them to 170. to kill the yeast and forever lock the cider into it's perfect state 😁 I know it sounds like a lot more work but I am a little OCD with allowing my cider to run totally dry. Cloudy with sediment always tastes better. Keep up the good work 👍

Very entertaining video and you have a very likable personality. I'm sitting on a 6 gallon carboy of cider right now and I hope I enjoy mine as much as you did yours. I've read that aging it for several weeks or more makes a huge difference in taste, so I'm surprised that yours was so tasty after only a couple weeks in the carboy, especially since you didn't even transfer it to a secondary carboy before bottling.

The bentonite clay I have seen used to fix leaks in pond or lake dam. Packed in the dam and when it got wet it swells up to seal the leak. I have also heard that farmers put it in cattle feed before taking them to market for added weight. never for wine.

Love the video! One small suggestion. Instead of putting water in your bubbler airlock, put sanitizer solution or a hard alcohol like vodka. Water can harbor bacteria and offers a slight chance of infecting your batch. It's a small suggestion, but may save your batch one day! Great video again. Thanks :)

I've never made any alcohol, but I've heard that racking your wine several times gets rid of the sediment. But I suppose racking the wine is a real pain in the ass, so if it doesn't bother you, drink up! After thinking about, it I guess drinking the wine and leaving the sediment in the bottom of the bottle is a final racking? :-)
