Today I'm making a bunch of leftover banana recipes. Overripe bananas are not to be wasted. They can provide a wonderful base for many delicious dishes. Instead of throwing leftover overripe bananas away, you should try one of these recipes: banana smoothie, banana pancakes, banana oatmeal cookies, banana bread, banana muffins, or banana ice cream. Over-ripe bananas for pennies each at a local health food store helped get me through my senior year in college. I stored them in my fridge in a paper bag until I needed them. That health food store is long gone (thanks big brand stores for knocking out all these wonderful locally owned and operated stores), but all their marvelous produce sales was God watching over me.

those big box stores are only winning because people want "cheaper and faster"... If we boycotted them, they would have no choice but to close...and leave abandoned those buildings which neighborhoods could take and turn into coops for the people! There is NO incentive anymore. THAT'S the problem.

I make banana type ice cream with walnuts and a bit of maple syrup. It’s delicious. It is better for people who are lactose intolerant. You can add anything to bananas.

These are great recipes - thank you! Bananas taste good and are cheap - I use them all the time now in baking pancakes, banana bread and banana oat breakfast (or snack) cookies.

Love bananas, too! Maybe you wanna try crispy Maruya (Filipino banana fritters)? You can make them 2 ways - sliced bananas shaped like a fan or mashed (perfect for overripe bananas). You can even serve it with ice cream!

Try adding some flaked coconut to the banana bread and muffins. The easiest way to get the parchment paper to fit in the pan is to crinkle it up into a ball, then unfold it and place in the pan. It will stay put.

Yes,thank you. I was delivered 54 lbs when I had only request 18 bananas...I got 18 bunches.. the Instacart shopper was not paying attention & with that amount never messaged me to check really 18 bunches? I live by myself a senior. Well I just dropped off 28 pounds to neighbors. And got some fabulous ideas to do with all the bananas here! 😂

By the way, when he shows the other things you can add like dried fruit to the oatmeal cookies, he shows white raisins, you should understand that those are loaded with sulfites and some people have breathing difficulties after eating them. If you read the ingredients they are not simply dried raisins. White grapes or tops and seedless grapes when they dry they are dark colored. Sulfites are added to keep the color bleached out, they do that with a lot of things especially things like dried apricots. If a dried apricot is bright orange it’s not very healthy to eat because it’s loaded with sulfites. Always good to know what’s in your food right?
