Coffee beers are as much fun to brew as they are to drink, and people love to debate the best way to use the coffee -- in the boil, in whirlpool, in the fermenter? Northern Brewer head development brewer Brad Segall shares his Oatmeal Coffee Porter with Micah Svejda, owner of Backstory Coffee Roasters (formerly Bootstrap Coffee Roasters), and get his advice for when is the best time to include the coffee for optimal flavor extraction.

good call with waiting just a bit after boil is done. it will give it burnt taste if you add too soon. I used to work coffee for bout 4 years. loved free quality coffee I used to get. mmmm. been thinking of coffee porter.

You said it grind the coffee - I guess I missed that part and just steeped the beans. Will let you know how it goes!

There's a lot of different ways to do it. Some folks just "dry bean" with whole beans in secondary. Post-boil steeping of coarsely ground coffee is just one of more popular ways of getting good flavor and aroma without the bracing bitterness that boiling it would do. Please do follow up here and let us know what effect steeping the whole beans gives you.

This brew master is brilliant!! No wonder my coffee stout/Porter is too astringent now I'm wondering how much coffee to put in my kettle. Also thinking folgers isn't the stuff maybe I should use Maxwell or Sanka. What's your thoughts on that? There's this coffee I bought once from world market it was Guatemalan coffee and it was really damn good I'd try it but it's very expressive

This is one place where we would suggest quality ingredients because you don't want to waste five gallons of beer. I'd say splurge on that top- or middle-tier roast (like the one you mentioned) and go for it. You use Grade A hops and malts, so don't skimp on the coffee.

So, for a 5 gallon batch, adding like they did here after boil....how much ground coffee do you add?

Of course this can vary depending on flavor of coffee or your personal preference of intensity, but for an example our Blue Collar Coffee Stout beer kit calls for (and comes with) 6 oz of coffee to be added to wort at flame-out and steeped for 10 minutes before you begin to cool the wort. Hope this helps!

Whats a good way to get only coffee aroma and little to no flavor? Cold steeped? Adding beans to fermenter?

That is a very interesting question. I'll ask our brewmasters to see if they have input. From my coffee beer brewing experience, I would think the later the better -- and maybe keeping them whole. So, perhaps whole beans in secondary? You could also do a bench test with a small amount of finished but unpackaged beer and see if ground vs whole seems to make a difference.

How much coffee to how to much beer ratio would you recommend?

The amount can differ based on roast, character of coffee, etc. For most of our coffee beer recipes we suggest 4-6 ounces of coarsely ground coffee put into the kettle at the end of the boil to steep for 10 minutes (for five gallons).
