Yikes, like the other commenter says, she fails to tell you to lower the heat to just keep a whisper of steam coming out of the spring valve once the valve opens. The reason the valve popped open via of pushing the spring up is because you are over pressure, because of the high heat, you need to drop the heat to low immediately. This is basically the same principle as a rocker valve pressure cooker where high heat gets the rocker going, but you lower the heat immediately to maintain a slow rocking motion; except a spring valve is more precise, it loose less water, so lower your heat as soon as you get a steady stream of steam. That said, this is one of the only videos that has the cooking time correct. The yellow valve popping out only tells you the pot is building pressure, that the pot is correctly sealed, it locks the handle, the pot is still under the lowest 8 lb setting. It doesn't do anything else. You start your cooking time when the spring valve releases steam and you lower your heat. Every video I have seen on the Fagor Duo has this wrong. There is a KZfaq couple demoing a Fagor Duo, cooking together, camera panning between the two stoves. The female says "when the yellow valve pops up, start your cooking time", the man "when you see the steam come out, lower your heat, start your timing ", unbelievable no one saw that mistake. Many so called Pressure Cooker experts, those that write books, make a living at it, etc, state it wrong, seen a few posted videos from them too, worst, America's Test Kitchen states it wrong. The problem is there is at least one high end pressure cooker, aka $250 plus, that works that way, it has a single pop up, with a low and high pressure markers on it, for some silly reason they believe all pressure cookers work that way, not true. I believe America 's Test Kitchen rates it higher then the Fagor, but because of its price, rates the Duo Fagor as their pick. You just need to read the manual. The Fagor manuals are not the best read, but the instructions are correct. Also the Fagor Duo is an excellent pressure cooker, don't own the Futuro, its claim to fame is short handles for easy storing. We got the Duo because I know, well at the time we purchased it, it was still made in Spain, as I recall other models are Chinese made. Not sure it matters, it matters to us.
