For the Dough of the Mochi Recipe:
100 g glutinous rice flour (I bought glutinous rice flour from trendyol)
30g corn starch
40 g granulated sugar
180g milk
20 g butter
pink food coloring
For the cream:
2 cups Milk
1 tea glass of sugar
2 tablespoons Flour
2 tablespoons of Starch
1 Egg
1 tablespoon butter
1 cup Vanilla
200 g Cream
Fabrication:
For Mochi Dough
• Add glutinous rice flour, corn starch, sugar, milk and food coloring into a microwave-safe glass bowl and mix. Let's cover the bowl with microwave-safe stretch foil, poke a few holes in it and microwave it until it is fully cooked (about 4 minutes).
How do we know if it is fully cooked?
-The dough becomes solid dough. You won't find any flour liquid floating in the dough. The color is translucent.
•While the dough we took out of the microwave is still hot, let's add the butter and mix it. Since the dough is very sticky, instead of kneading it in your hands, let's knead it in the dough kneading machine until it reaches an elastic consistency. Afterwards, let's oil our hands, take the dough, wrap it in cling foil and let it cool in the refrigerator for 1 hour. The stickiness of the dough decreases as it cools.
• Dust the work surface and dough with Starch so it doesn't get too sticky. We divide the dough into 8 equal parts and roll it out into 8 round phyllo sheets.
Making the Cream Filling
We put milk, sugar, flour, starch and eggs into the pot and cook them. After it is cooked, we turn off the stove, add butter and vanilla into the pudding and smooth it with a blackener. Let's pour the hot pudding into the bowl, cover it with cling film and keep it aside to cool. After the pudding has cooled, put the cream into our whisking bowl and beat it until it hardens. We pour the cooled pudding into the hardened cream and continue whisking until it becomes smooth and our cream is ready.
Let's combine mochi with cream
• Let's put each mochi dough into a round apparatus, fill it with cream filling and close it by holding the edges. Let's tear off the excess dough from the top and put it in the muffin paper 🥰 Our Mochi Dessert is done 🥰 Let's enjoy it after leaving it to rest in the refrigerator for about 30 minutes 🥰
