This is how we used to make at home! Fermentation will not happen magically! Good bacteria in sterilised hands will help in fermentation!

@@meedoshi8526 Usar la Mano o el Brazo sin cubrir es muy antihistamínico,recuerde que el ser Humano segrega sudor mediante los poros de la piel,lo cual a su vez produce Bacterias. Ademas eso esta muy mal visto,en dado caso que para preparar ese platillo se requiere revolverlo de esa manera,una cuchara de madera o Cucharón es suficiente,y siempre es necesario usar mínimo Bolsas plásticas cubriendo las manos para que tenga el mínimo contacto con la piel a la hora de tocar los alimentos.O por lo menos así es en mi País 🇻🇪🇻🇪🇻🇪

This is very less. They normally put hand until their underarm into the idly mix. In fact this looks like a fake video because when they mix the batter with hands then they also fill the tray with hands scoop.

Omg people....just know the process of making idli😂🤦‍♀️ someone is saying to use gloves...WTF?!! This is the way idli should be made...Only if you use hands, fermentation will happen and that makes the idli soft and fluffy! The only thing is to wash the hands...that's it.

Batter mixing, no need for gloves. The person who is picking up idlis and serving should wear gloves I think. Hot idlis may be an exception. But there are other street vendors who sell other food items need to be more hygienic. There are other Asian countries such as Thailand where street vendors wear gloves depending upon what they are selling.

Hand should be used only upto your wrist. Not further. After the wrist hair is in the hands and not advisable to use inside the batter. Use smaller vessels and after beating by hand upto wrist pour into main vessel.

Palms( no sweat) is accepted but rubbing batter in arm skin is not acceptable ( more sweat will harbour more microbes which may cause contamination ). When it comes to public serving, the food should be prepared with care.
